ashakumar@gnn.comZucchini & Green Pepper SaladIngredients (use vegan versions): 2 firm zucchinis - washed, peeled and minced
1 ripe green pepper - washed, minced
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon dried oregano
10 - 12 cleaned and cut cilantro leaves
6 drops of lemon juice
Directions:This is a very easy and delicious salad. Combine the minced zucchini pieces and green pepper pieces in a serving bowl. Add the salt and black pepper and mix well. Chill the mixture for about 1 hour.Just before serving, garnish with oregano and cilantro leaves. Sprinkle a few lemon drops on top to give an extra tang of flavor and the dish is ready!!
Serves: 6

Greetings from sunny South Africa. Thanks for interesting salad. As, we call some things by different names, could you give another name or alternative for cilantro leaves. I must confess I don't qualify as a cook at all, and am delighted to have found Veggies Unite! for assistance. I enjoy herbs and have some in my garden, so if you can suggest something for a similar / compatible taste I would appreciate it.

cilantro is also called coriander

Cilantro is actually corriander leaves rather than the seed. A substitute may be a strong Italian leaf parsley, but cilantro is special!

Coriander(leaves)/cilantro is also known as danya/dhania - not sure of the spelling, but that's the Indian name for it.
