TexMex Macaroni Surprise

Ingredients (use vegan versions):

    1 1/2 macaroni
    1 can crushed tomatoes
    1 can baked beans in tomato sauce
    1/4 cup @Bulls-Eye vegan BBQ sauce
    2 tablespoon ketchup
    1 tablespoon taco seasoning
    sprinkling of crushed chili peppers

Directions:

Cook macaroni. Add everything else. Stir and simmer for a bit. Eat right out of the pot if you're a bachelor guy like me! Like Tony the Tiger would say, Its Grrrrreat!

Serves: 2

Preparation time: 10


Is this 1 1/2 cups or boxes of macaroni? If boxes, what size box? This sounds great, I will definitely give it a try. Thanks!  Anna

We tried this and the Barbeque Sauce made this much too meatlike for us.  Howe'ver, if you are shifting away from eating meat and you want something familiar, this would be perfect.

Receipe sounds good, but I have 2 questions.  One-how much macaroni is 1 1/2?  Two-what size can of crushed tomato?

I think 1 1/2 is referring to cups not boxes. I use that measurement when cooking for two, and usually its enough.

I made this using 2 boxes of Roads End vegan macaroni and cheese, a large can of vegetarian baked beans, and a can of Mexican-flavored diced tomatoes, 1/2 a package of vegetarian burger crumbles, 1 tbsp. taco seasoning, and 1/4 C Famous Daves barbecue sauce.  I omitted the ketchup and the chili peppers.  Yum!  I served this to my omnivorous gaming group, and they ate it up!

I just made this, and it was great! Howe'ver, I had to make a few substitutions: I used two fresh diced tomatoes rather than a can of crushed. Also, I used tri-color rotini-- I think macaroni will work better. Very tasty!

This looks great, although I might substitue the crushed tomatoes for pico de gallo and the baked beans for black beans.  I bet it would turn out nicely as a casserole if you baked it, also.

Very very good. I added tvp and used black beans. Quick, delicious and very FILLING. I definitely recommend it.

The flavor of this is great but it seems like it needs something to give it some texture.  I think I'm gonna give it some fake burger crumbles next time and maybe some lightly sauteed onions and green peppers just for kicks.

This was great.  I added an onion, garlic, fake meat crumbles and some frozen corn.  Meat-eating boyfriend loved it.

This was pretty good, though I am going to try it next time with a different vegan BBQ sauce -- this was a little too sweet with the sauce and the baked beans.

I made this again today and used steak sauce instead of ketchup and added a can of drained corn.  The kids liked it.  I use this taco seasoning mix from the Tightwad Gazette II:

6 t. chili powder
4 1/2 t. cumin
5 t. paprika
3 t. onion powder
2 1/2 t. garlic powder
1/8 to 1/4 t. cayenne pepper

Mix all ingredients and store in airtight container.  This is twice as strong as storebought so only add half as much.

Yummy!  I followed the recipe pretty closely except added an entire onion and some corn.  I made a double recipe so I'll have lots of leftovers for my next few lunches--looking forward to that!
