Easiest Potato Soup

Ingredients (use vegan versions):

    4 smallish potatoes, peeled
    1/2 large onion
    1 carrot, peeled
    1 tablespoon oil
    salt and pepper
    (optional: veg. broth)

Directions:

Cut potatoes and carrot into 1-inch cubes, more than cover with water in a saucepan (some veg. broth is also good), and bring to a boil.

Saute onion in oil until brown.

When potatoes are soft, dump out most of the cooking water except for the last couple of inches, and dump in the onions.  Set aside a few chunks of potatoes and some of the onions, then blend the big pot of potatoes and onions with a hand-held blender or mixer, or use a food processor or blender, being very careful not to splash!  Add water, veg.  broth, or soy milk as needed for desired soup-like consistency.  Mash the set-aside potatoes a little, then add them and the onions back to the big pot and stir.  Add salt and pepper to taste.

Serves: 4 or so

Preparation time: about 25 min.


Carrots are optional!

I just made this, and I sauteed some baby bella mushrooms with the onion. It adds some more ooomph to the soup. Great recipe!

This was really good, and truly the easiest! I didn't bother peeling the potatoes, and I added a very small stalk of celery and a cube of vegan veg broth boullion. Used soy milk and just pureed the whole darned thing because I was lazy and didn't feel like separating some pieces. Used my immersion blender for that.... a GODSEND. Thank you!  I served it alongside the best vegan bacon recipe from this site.... we made Facon, Lettuce and Tomato sammiches and soup Smiley Yippee!!!!!!

that's when I looked in my fridge and I found absolutely nothing there... I tried this soup. doesn't really sound appealing, but its delish! Loved it! I also added garlic and parsley and a little bit of cumin. Very good! Thanx for the recipe!

This soup was excellent!!  I am going to make it again tonight and hopefully freeze some for the coming cold nights..I would definitely follow the suggestions for cooking the potatoes in veggie broth and i sauted dried roesmary and dill with the onions.  Super easy and super good..Can't beat this one..(and i am a super picky soup girl.) Grin

this soup was in deed very easy and so quick. i didn't have carrots so i sauteed some frozen broccoli with the onion. i also did no peel the potatoes because i was in a hurry. after the potatoes boiled, i just added the broccoli and onions and uesd my sad little braun hand blender and mashed it all together. i added soymilk and water to get the consistency i wanted. this is a seriously good soup!

This is the first soup I have ever made from scratch and it was SUPER EASY! I did use a carrot however you can not taste it, I decided to put the the ingredients in the food processor because I love creamy soup. I also used  plain soy milk and vegetable  broth to make it a more soup like consistency. I also added a lot of crushed black pepper because I love that, salt and about two tablespoons of earth balance and it is sooooo yummy! Cheesy

this is simply amazing. i had a few things i needed to use up so i tossed in some sliced mushrooms and some spinach and some tofurky italian sausages. and toonnss of garlic. and i also added some earth balance because i wanted it to taste rich and super fatty. and i added the rosemary suggested and when i boiled my potatoes in broth i added some bay leaves and chunks of onions and the carrots.
this came together much faster than i had anticipated and it was exactly what i needed today staying home from work sick.

Just made it, and it was really easy even for a totally inexperienced cook like me. I doubled the potatoes, put in a whole onion, leek and a clove of garlic and boiled the potato and carrot in vegetable broth. For seasoning, I added cumin, and it's super yummy Thumbs Up The rest of my massive batch will go in the freezer, so I'll have something at hand during the school week.

Just made it for my girlfriend and I. I doubled the recipe and still had barely any leftovers, that is how delicious this soup is!! I added some mushrooms and garlic to the onions. I had no vegetable broth so I only used water and soy milk... it still tasted wonderful! I served it with 3 slices of cucumber and pepper. YUM!

I haven't had creamy potato soup like this since pre-vegan days, it was perfect!

I was really excited about this recipe, but when I made it, it was just not what I was looking for.  I used russet potatoes, carrots, celery, onions, and mushrooms.  And I added some "Better than Bouillion" to the water the potatoes were in. 
In the end, it was just not as creamy or as flavorful as I wanted, even though I added soy milk and nutritional yeast.  *sad face*

I just ate this for lunch and it was friggin awesome! adding back the the mashed potatoes makes it extra delicious and creamy. I also reserved a couple chunks of potato and carrot to add back in= chunky and extra awesome. love it.
