Spinach and Hummus Pasta

Ingredients (use vegan versions):

    1 box whole wheat pasta
    3 cups liquidy hummus (best if homemade)
    1 package frozen whole leaf spinach (thawed)
    1 red onion, sliced
    chopped parsley
    nutritional yeast to taste
    lots of garlic, diced
    olive oil

Directions:

**Its very important that the hummus be nearly free flowing for this recipe. Try adding water/lemon juice mixture to liquidize without compromising flavor.

Cook pasta according to package directions.

Meanwhile, sauté onions, spinach and diced garlic in an iron skillet with a little olive oil or vegan soy butter.

Add onions and spinach to pasta and Stir.

Cover pasta generously with hummus and add parsley.

ENJOY with black olives, roasted red peppers, and roasted garlic cloves!

Serves: 4

Preparation time: 30 minutes


This sounds really good..  I'll bet it would be good with kalamat olives, sundried tomatoes and roasted red peppers too. I've made a pizza that way..

i made this the other night and it was really good!  i think my package of pasta might have been too big, cause i thought it needed more spinach.  i would have never thought hummus was so good on pasta!!! next time i would add more vegetables

Yep, this one's a keeper.  :-)  We sauteed the onions, spinach and garlic in water (we're watching fat intake). The only thing I would do differently next time is to make the hummus even more liquidy than I did. This dish has a really unique flavor... give it a try!

I used fun shaped brown rice pasta, left out spinach entierly, and instead added toasted pinenuts, pan fried tofu, and edamame beans. Mmmmmmmm Im glad I used my homemade hummus on this - its garlic-y and doubles well as a pasta sauce ^^ I dont usually like pasta, Im more of a rice person, but this sure was a treat Smiley

This was YUMMMY!!! Of course I love hummus anyway I can get it  Wink I subbed a small white onion for the red onion, omitted the nut.yeast, used 1 clove of diced garlic (wil probably use 2-3 next time), and also added chopped sun-dried tomatoes, kalamata olives, and 2 shredded carrots. This was AWESOME!! I can't wait to have the leftovers for lunch!!

I mixed the hummus with the spaghetti, so it was covered completely.  Very yummy! We all had second helpings of this dish.

Made with whole wheat linguine, several cups of spinach (we buy it from costco and besides massive salads, have never had anything else to use it in), homemade hummus, marinated mushrooms, sundried tomatoes, calamata olives and about 5 cloves of garlic.  It was absolutely delicious, even the meat-eater fiance liked it!  I think you could throw almost anything in this and it would still be pretty tasty.

Only suggestion is to salt it.
