Easy, Quick and Cheap Taco Salad

Ingredients (use vegan versions):

    1 lg. tomato
    lettuce (about 1/2 of the head. Oh, iceberg is better in this dish because its crispier.)
    1/2 red onion, diced finely
    about 1 1/2 cups of tofu cheese
    about half a bag of tortilla chips, crushed
    1 avocado, chopped
    1 small jar of catillina or french dressing
    1 can of pinto beans, rinsed
    1 can of black beans, rinsed
    1 can of kidney beans, rinsed

Directions:

Chop up all ingredients and put them into a med. size bowl.  Pour in all of the jar of dressing and toss.  Basically, this is a really GOOD meal that everyone so far has enjoyed.  Also, you can add all sorts of stuff if you had more time.

Enjoy!

Thans--this gives me new ideas for a favorite. Catalina dressing (low-fat is fine) is the Secret Ingredient.  I mix it with salsa: about 1 part salsa to 3 parts dressing, usually medium hot--vary both heat and proportions to taste.  It is delicioso y muy low calorie.

We thought this was a great lite lunch. I personaly Loved it, but while prepairing it we though it needed something and we added ripe black olives. Makes a lot, invite some friends

YUMMY YUMMY YUMMY!  But I replaced the salad dressing with a small jar of salsa and a can of tomatoes, drained and crushed ... (i LOVE tomatoes)!

I love your receipe but am concerned about the canned beans. I have heard that they are not healful.  How about using dried beans in this recipe?

thousand island is really great for this recipe, unless you hate pickles. ive tried something similar to this, but my friend added a meat substitute cooked with a package of taco seasoning, it was yummy.

Taco seasoning cooked with textured soy protein works great but most taco seasoning packets are not vegan (they contain beef bullion or beef extract).

Hint:  If you know you're going to have some left over for the next day, leave the crushed chips separate.  They get mushy.  Mix them in shortly before you're going to eat the leftovers.  Yum!

I know this takes a lot of the health out of it, but Fritos substituted for the tortilla chips is yummy!

Well, its quick I'll say that. As for taste it rates a 3 on a 1-5 scale (5 being the best). As for texture it rates a 1. Heres some suggestions: Rinse and drain the beans thoroughly. (moisture in the form of water is detrimental to this dish) Use Iceburg lettuce (as suggested) and add it toward the end. A jar of Catalina dressing is WAY too much. I would suggest using either a combination of dressing/salsa and/or just one or the other. Whatever you choose, just add enough to coat the salad LIGHTLY. Otherwise, its just a mushy mess. Adding taco seasoning, textured soy protein, etc. is a welcome addition as is the suggestion of adding the chips just before serving. Some grated/chopped carrot and/or celery is also a nice texture enhancing element and doesn't take much time to do at all. One serving suggestion would be to place the lettuce in a bowl and make a well in the center where you would mound all of the other ingredients (mixed together) and surround the bowl with some diced/sliced avocado. Top with some cilantro. None of these suggestions take much time to do at all. Its still quick and easy. (i.e. while you're draining the beans you can be chopping up the various other veggies/herbs) I've made this recipe a few times and will continue to do so
with the above variations.

It may sound kind of gross on taco salad, but an Italian dressing on this is really good, along with the textured soy protein in vegan taco seasoning.

this makes a big party meal. i made it for super bowl sunday for just my husband and myself and we had too much. it doesn't keep well, either. For two people i would suggest splitting the recipe in half or only using one can of black beans. i added some fresh lime juice and substituted olive oil for french dressing.

YUMMY!!  I loved this!!  It made A LOT more than I expected, but as everyone loved it, that was a good thing!  I only used about half a small jar of dressing and about 3/4 of the bag of chips.  Also, I've never used advacado before so I wasn't really sure what to do with it.  I just cut it in half, deseeded it, and scraped it into the salad.  I think next time I'll add some black olives and some salsa.  All in all it was delicious and I'll definitely make it again(my brother is forcing me to, and he's a meat eater!)

In terms of taco seasonings, Ortega makes a good one that is kosher and has no meat.

This was the BEST Taco Salad!  I also added a crumbled Boca burger.  Hubby and I chowed down!  Thumbs Up
