Chucks Black bean Pizza

Ingredients (use vegan versions):

    19 oz. can black beans
    1 med. onion, diced
    1/2 each of red and yellow bell pepper,cut bite-size
    7 oz. whole kernel corn
    1/4 teaspoon cumin
    2 cloves garlic, minced
    1 teaspoon basil
    1/2 teaspoon salt
    1 teaspoon cilantro
    10 oz. can RO*TEL diced tomatoes & green chilies, drained

Directions:

1. reserve 2 Tbs. black beans, mash the rest

2. blend the various spices into the mashed black beans

3. spread the mashed black beans on the pizza she'll of your choice

4. scatter the remaining topping ingredients over the black beans, including the two reserved Tbs. black beans

5. place in the oven for 15 to 20 minutes, or recommended time for shell.

Serves: 6

Preparation time: 12 mins.


This was great!  It was colorful, easy, and delicious.  I loved the way that the protein was a BASE instead of a topping (The only other time I have seen this was before I went vegan; it used hamburger, wich didn't sound good then.), and the tomatos (I used my own dried reconstituted tomatoes) were a topping.  Again, very good.  I reccomend this recipe.

This was wonderful. I used the crust mix at this site:  http://www.melborponsti.com/mel-0036276.html I did not use the parmasean, and I did not have any beer or club soda.  I used diet coke...lol.  It turned out wonderful.  We were low on food due to the hurricane, and I was rummaging through the pantry to see what I could come up with.  YUM!

I enjoyed this a lot-- definitely a unique twist on pizza.  Its easy to make and you can just throw on whatever toppings you have lying around.

This is an awesome pizza.  I've made it twice and both times it was great.  I really love that the "sauce" is black beans.  I used a smaller shell, so I used smaller measurements for the toppings.  Also, I just used a chunky salsa for the Rotel, because my grocery store does not carry it.

This "pizza" is really good.  And pretty too (honest! ignore my photo!)! I made using the "Easy, Yummy and Quick Pizza Crust" recipe from site(with white whole wheat flour), and served with guacamole. YUM!

This must have been the most delicious pizza that I have ever eaten!  I am not a vegan, but a vegetarian so I added cheese as a topping, and I left out the cilantro, but otherwise it turned out great.  I love this recipie and it is going in my recipie folder on my computer, only my favorite recipies go there.  Thank you for posting this.

We liked this pizza. I used a leftover herb crust (Quintess recipe), but I didn't drain enough bean liquid..so it was a little runny, but now I know. I added cayenne, and used fire roasted tomatoes, zucchini, green pepper, green onions, and lots of cilantro. A good, different pizza.  Wink
