Pasta with Beets

Ingredients (use vegan versions):

    1-2 cloves garlic, minced
    3/4 cup onions, finely chopped
    2 tablespoon white wine
    2 cups beets, diced
    1/2 cup white wine
    1 tablespoon oregano
    1/4 tablespoon crushed red pepper, or to taste

Directions:

Saute onions and garlic in vegan wine until fairly soft.  Add beets (I bet you could add the greens here, too!) and cook for about five minutes.  Add vegan white wine and spices and cook until beets are tender.  Serve over pasta.

This is freely adapted from a recipe by Laurie Colwin.


What is vegan wine, and what would be the animal source of non-vegan wine?

I think it would be best to find information on the internet instead of here, but in a nutshe'll sometimes they use animal proteins like egg or fish isinglass to solidify and clear up the sediment in the wine. The same goes for beer too.

I wouldn't pre-cook the beets.
Beets are great raw, as are the beet greens. But make sure you wash them real good before using them (peeling beets can easily make you kitchen look straight out of an episode of CSI)

sure! use wine vinegar or grape vinegar (diluted of course). it's almost the same because when spirit evarporates from wine it leaves vinegar.

This looks good, I was looking for a way to use up some beets that my mom bought.  I just wanted to note that vineger is not just wine with the alcohol evaporated.  Vineger is actually spoiled wine.  I make wine and vineger is my enemy.  If the wrong bacteria gets into the mix while making wine then instead of wine you get vineger.  Hence why when making wine you have to be VERY clean, use food grade disenfectant on hands, utensils, and all surfaces that come in contact with the wine mix, and have as little exposure to the air possible since bacteria from the air can turn wine to vineger too.  To ferment the wine you use wine yeast that is almost exactly like bread yeast.  But for this recipe, I think vineger would do fine in place of wine, I plan to use red wine, don't have any white wine.

To my great surprise, this turned out really well!  I'm not a big fan of unadulterated beets, but the flavor really works with the wine.  I must admit I added a single diced tomato as a kind of voodoo charm, and topped the finished dish with nutritional yeast.  Definitely didn't need the tomato, and nutritional yeast, well, it goes on everything with pasta.
