Cauliflower and Garlic over Soba Noodles

Ingredients (use vegan versions):

    1 package of soba noodles (any flavor)
    1 medium-small head of cauliflower
    1-1 1/2 tablespoon chopped garlic (aka, MANY cloves crushed and minced)
    Salt to taste

Directions:

Its that easy.  Chope the cauliflower into small pieces.  Cook with the garlic and salt in enough water to heat thoroughly, and not burn.  Serve over cooked soba.

Quite simple and good. I can see the appeal of the soba here--it has a good texture, good flavor, and--perhaps most importantly--it's not white. (At least my soba wasn't.)

I sauteed the garlic in a teeny little bit of oil, just b/c I didn't know how it would taste without. I used about 1/3 cup of water (for one serving of this recipe) and it cooked it nicely without adding more fat. The flavor of the cauliflower was pretty nice.

I think this recipe would be fun to play around with some b/c it is so basic (although it is good in its basicness). I would just be careful, though, because it is also delecate. I thought it could use a little "dressing," so I added sesame oil. Don't do that--it completely overpowered the caulflower. (That's my fault, though, and not the fault of the recipe.) Some green onions may have provided a nicer contrast, perhaps with a milder flavor oil to tie it together.
