Tomato/Basil Pasta

Ingredients (use vegan versions):

    1 tomato - chopped
    1/2 cup chopped fresh basil
    1 sm. can chopped black olives
    1 clove garlic - chopped (can add more if desired)
    1 Tablespoon olive oil
    1 Tablespoon red wine vinegar
    salt and pepper to taste

Directions:

Combine tomato, basil, and olives in a bowl, set aside.  Meanwhile cook pasta, drain and set aside. Next, heat olive oil in a skillet, add garlic and saute for approximately 2 minutes.  Then add pasta, and other 3 ingredients stirring constantly.  Add vegan red wine vinegar and heat for a few more minutes. Remove from heat, sprinkle with salt and pepper.  Enjoy!

Serves: 2.

Preparation time: 30 minutes.


This recipe is fantastic!  Easy to make and looks beautiful when served.  Has enough familiar ingredients that it can be served to meat-loving and vegan-skeptical friends.  Can be made without oil to reduce fat content further without giving up taste.

This recipe is delicious! The flavors of the tomatoes, basil, olives, and garlic blend beautifully.  It is quick and easy to make, and cleanup is easy too.

i actually wipped this up before i found this recipe. i was right - it tastes great!
for my sour tomatoes i added a bit of sugar.
