Tomato-Basil Pasta

Ingredients (use vegan versions):

    1 lb. Fettuccine
    1/2 cup Olive Oil
    8 large Cloves Garlic
    2 - 14 oz. can of Diced Tomatoes
    2 cup basil Leaves
    2 teaspoon salt
    1/2 teaspoon pepper

Directions:

Cook fettuccine, following directions on package.  Heat oil and add chopped garlic to large non-stick frying pan over medium-low heat. Stir frequently, don't burn!  Add diced tomatoes (drained) and sliced basil.  Add salt and pepper.

Serves: 4

Preparation time: 25

I think this would be excellent with 1/8 the salt.  I would not have included  this much salt; my husband made it following the directions exactly, and it was inedible (and he actually likes salt, but this was too salty for him).   We'll try it next time with 1/4 tsp salt (with more to taste if necessary), and I'm sure it will be 5 stars.

This recipe was delicious. I'm the only vegan in my family and some times my siblings are wary of trying anything vegan but they all loved this recipe. I followed EHARP's advice and used an eighth of the salt, which seemed to go over quite well. I think next time I'll try it with fresh tomatoes though because despite the seasoning the metal taste of the can snuck in. Wonderful recipe all in all, I'm sure we'll be having it again soon! Smiley

This sounds great! I'm going to make this tomorrow night. I think I'll add an onion and decrease the amount of salt.

I also had to use dried basil- used about a tablespoon.

just perfect :] cut down on the salt as suggested, added a sprinkle of penzeys pasta mix. so good, and perfect for a fast dinner :]
