Spaghetti and Meatballs

Ingredients (use vegan versions):

    1 pound of tofu or package of Gimme Lean sausage flavor
    parsley
    1/2 cup chopped walnuts
    lemon juice
    pepper
    lots of garlic, best crushed and finely diced but can be powdered
    bread crumbs
    (optional) fake vegan parmesan cheese - sold at most health food stores
    can of tomato sauce or your favorite spaghetti sauce
    spaghetti or other pasta
    olive oil

Directions:

Get a big mixing bowl and crumble 1 lb of drained tofu or Gimme Lean sausage flavor.  Finely chop 1/2 cup of walnuts and add to mix.  Stir well, adding liberal amounts of parsley (I add half a spice container), pepper, lots of garlic (powdered or if fresh, I use several cloves), 1/4 -1/3 cup of vegan bread crumbs, 1/2 container of fake parmesan cheese (optional) and 1/3 cup lemon juice.  Mix so that everything is well distributed.  Roll into medium sized balls (should make about 15 balls).  Heat olive oil in large skillet or wok until very hot.  Add meatballs and and brown well, adding powdered garlic and pepper as you toss them in the olive oil.  When they are very well browned (5-10 minutes), pour can of spaghetti sauce or tomato sauce over the meatballs.  If just tomato sauce, add some oregano and basil.  Cook for 1 minute over medium heat, and serve over freshly cooked spaghetti or other pasta.

Serves: 3-4

Preparation time: 30-45 min


meatballs completely fell apart while cooking in the wok.  would not recommend using this receipe for meatballs - we ended up having a meatball mash instead which soaked up all the sauce leaving us with dry spaghetti.

I couldnt find the Gimme Lean, so I used Marjon Tofu Crumbles and the flavor was great.  I also added an egg white (which I didn't like to do), but it kept the meatballs together.  They were really yummy!

i thought this recipe was amazing. i made these meatballs for a dinner party for a bunch of meat-eaters and they couldnt believe how good they were. they all asked for the recipe. they are not as good the next day however, they get a little soggy. i have frozen them on occasion so i had them available in a flash! i do use the gimme lean sausage i think the tofu would not hold it's shape as well!
i have made these a bunch of times now and they always comeout so good!!!

My children and I simply loved this dish. I used wheat germ in the "meatballs" instead of bread crumbs. They were delicious!

these were so delicious!! tasted just like the real thing. i didn't realize how much i missed meatballs til i took a bite of one of these guys. yummm
