Cashew Sesame Noodles

Ingredients (use vegan versions):

    For Sauce: 2 large garlic cloves chopped
    1 1/2 tablespoon rice vinegar
    3/4 teaspoon hot red pepper flakes
    1/2 cup salted peanuts
    3 tablespoon soy sauce
    1/4 cup sesame oil
    1 teaspoon sugar
    1/3 cup water
    1 lb thin spaghetti
    1 1/2 cups coriander sprigs chopped fine

Directions:

Make Sauce:  In a blender, blend sauce ingredients with salt, and pepper to taste until smooth.  Cook pasta al dente, drain, and toss with sauce, and serve.

Serves: 4

Preparation time: 30 min


Where are the cashews???

Peanuts!?!?!?  I thought I was gettin cashews!  Are they supposed to be faux cashews or psuedo cashews or is that a mistake?

I've made this several times just the way the recipe is written and its very good! I made it tonight for company and made a few changes that were really good. I doubled the recipe and then made another quantity of sauce, then tossed the cooked noodles with most of the sauce and mounded the noodles into a deep bowl. Then topped with steamed broccoli, snow peas and tofu cubes, poured the rest of the sauce over the toppings and garnishe'd with minced scallions, and sesame seeds. It was wonderful!

Just like to know how hot this is? - I'm a bit of a whimp u see!  If u have any ideas of how to make this more delicate if it is hot, please let me know!  Also spagetti is mentioned but the title says noodles which is better to use or does it not matter? - Thanks!

i would use noodles, and definately cashews but if u want it would probably be nice with some added peanuts.  I think it would be nice as a stir fry sauce 2!

What does one do with the coriander sprigs?  Do they go in the blender as part of the sauce, or are they a garnish perhaps?
