Garlic Broccoli Penne

Ingredients (use vegan versions):

    1 1/2 cups dry multigrain penne pasta
    2 cups broccoli florets
    8 cloves garlic, crushed
    1 teaspoon red pepper flakes
    1/2 teaspoon sea salt
    3 tablespoons olive oil
    1/4 cup fresh parsley, finely chopped

Directions:

Prepare penne according to package directions and drain.

Meanwhile steam broccoli until just tender.

In a large frying pan saute garlic in olive oil until fragrant, remove from heat. Stir in pepper flakes & salt.

Add  penne & broccoli, stirring to coat with garlic mixture.  Transfer to serving dishes & sprinkle with parsley. Serve immediately.

I sometimes substitute asparagus cut in thirds for the broccoli.

Serves: 2

Preparation time: 15 min

I made this tonight... but didn't have any parsley, and I didn't use the red pepper, but it was so tasty!!

Totally delicious.  The first time I made this recipe, I made it without parsley, and it was amazing.  I had to use plain black table pepper the second time because my roommate had unfortunately misplaced our red pepper flakes.  Not as good.  Definitely use the red pepper--sublime.
