Beef Stroganoff You Thought You'd Never Have Again...

Ingredients (use vegan versions):

    about 1 pound of seitan, (I use Beef Minit Meat) prepared & cut into strips
    1 large onion, diced
    6 cloves of fresh garlic, minced
    2 cups of Imagine Brand Cream of Mushroom Soup
    2 tablespoon Tofutti Better Than Sour Cream
    2 cups of sliced white mushrooms
    1 teaspoon sea salt
    1/2 teaspoon garlic salt
    black pepper to taste
    cooked pasta of your liking

Directions:

Emma’s Beef and Mushroom Stroganoff

This stroganoff tastes exactly like the dish my dad used to make when I was a kid.  Since becoming vegan, I never thought I would have it again.  Delicious!!

Prepare your Seitan and cut into strips.  In a large frying pan heat up your olive oil on medium heat.  The heat is very important, because you want to brown the onions.  You don’t want them undercooked or overcooked, just a nice brown color.  Add 1 large white onion, diced.  Add 5-6 cloves of fresh garlic diced fine.  Sautee mixture until onions are browned.

Add your mushrooms.  At my house, we use a BUNCH of mushrooms. (about 2 cups) and saute them until soft on low heat.  Add 1 teaspoon of sea salt, ½ teaspoon of garlic salt, and some black pepper.

When mushrooms are soft, add in your Imagine brand Cream of mushroom soup.  Add 2 dollops of sour cream to the pan and mix well until creamy.  Then add in your prepared seitan strips.  Cook on low 15-20 minutes so that the seitan can soak up all the delicious gravy.

Serve over pasta, or add your pasta to the pan & mix.  This will be the BEST vegan stroganoff you have EVER had!!  I usually pair this meal with a yummy garden salad.

This so great!!!! You would never believe that this is a vegan dish! I did have to make a few substitutions, due to what I had available to me, but it was still so great, and easy to make.  I had to idea where to find vegan cream of mushroom soup, and I also used a ground beef substitue instead of the seitan.  I sauteed up the onions, garlic, and the mushrooms, then took them out of the pan, and browned the beef.  I then added some flour to thicken, and some soymilk and a little bit of vegetable stock, then added the onion/mushroom mix back to the pan.  I think this worked well for a substitue for the soup and it still thickened up nicely. Other than that, I followed the recipe, and it was wonderful!!

This was soooo good! Just as good as promised! The sauce was way better than any stroganoff I used to make. I looooved it and so did my 8, 4 and 2/12 yr olds. I will DEFINATELY be making this again. Thanks!!  Grin

This turned out really good.  We didn't have any vegan cream of mushroom soup but my mom whipped up a nice replacement with the usual.  The sauce was nice and thick and the seitan really works well, although throwing in some veggie crumbles or something is good too.

Word to the wise, though: I haven't cooked much with soymilk before and accidentally used the vanilla flavor.  DON'T!  It will kick in an unmaskable vanilla taste and botch the batch.  If that's all you have, however, it won't kill your tastebuds - it was still pretty tasty.  five stars!

I just made it vegetarian and everyone loved it. I've made it 3X already.
I used Morning Star Farms VeggieCrumbles, baby Portabella Mushrooms, and Garlic Cream of Mushroom soup. MMMMmmmMMmmm

 I loved this recipe,  I used morning star farms beef strips, thats what I had on hand and and it was so delicious, thanks for a wonderful recipe!  Also served it on brown rice, YUM!  This may be on my christmas menu!

This was way good. I used 2 garlic cloves and made my own sauce instead of the mushroom soup. I'll make this again, for sure. 5 stars. Oh. I also added dill and celery seed.

Yum!!!!    And ridiculously easy for such an impressive meal!    I've made it once with "Minit-Meat Beaf" and once with packaged prepared seitan.  Both were fabulous!

I made this again cause it was that good before! This time I mixed it the stroganoff with like 3/4 a box of pasta and topped with creole (yes, i know i'm obsessed with creole)... this is an awesome recipe and i highly recommend it!

This looks great!! Does anyone know where I can get the seitan from? I live in New York and NO stores have it! I've been to whole foods, trader joes and all of my local health food stores, that carry veg. stuff. I just don't get it? It's a real bummer too because I LOVE seitan! It's my favorite meat substitue, but never can find it  Sad
Where does everyone else buy theirs from? Anyone from New York? If so, please tell me where you get it! Thanks!!!

You can buy Vital Wheat Gluten (most regular grocery stores have it) and make your own. Its so easy! Its basically adding seasoning, water, then either boiling or baking it. There's tons of recipes on here telling you how to do it. Much cheaper than the pre-made as well!

You can buy Vital Wheat Gluten (most regular grocery stores have it) and make your own. Its so easy! Its basically adding seasoning, water, then either boiling or baking it. There's tons of recipes on here telling you how to do it. Much cheaper than the pre-made as well!

For the Vital wheat Gluten, does a certain brand carry it...like: boca, Morningstar farm, lightlife, Yves...and is it normally refrigerated or frozen?

It comes in packages like flour.  One brand is  Bob's Red Mill.  Hope this helps.
