Easy Peace LoafIngredients (use vegan versions): 1 package/tube of Gimme Lean Ground Beef Style (not the sausage style)
1 cup of rolled oats
2/3 cup organic catsup
3/4 cup finely chopped onion or used dried equivalent
1/2 cup finely chopped parsley or used dried equivalent
1 teaspoon ground thyme
1/2 teaspoon salt
1/2 teaspoon chili powder
2 tablespoons light olive oil
Directions:This is a modified recipe and has been tested on recent ex-meat eaters who love it.
Preheat Oven 350 F
Mix all ingredients in a large bowl. Mush it together with your clean hands so that its well mixed, but not over mixed.
Lightly grease (with olive oil) a 9 x 5 inch loaf pan. Place the mixture inside and form a loaf.
Bake for 35-45 min., until a knife inserted in the middle comes out clean. Since this has very little oil in it, you might want to put some tin foil on top so it doesn't dry out, or spread 1/4 teaspoon of oil right on the top. Check the middle after 30 min. Since its free of animal products (cow and eggs) its safe to eat at any temperature.

Serve with gravy, peas, and mashed potatoes. I served this to a man who went vegan on MeatOut (March 20, 2005), he could not believe it is vegan.

Preparation time: 10 min.
To get better results, make sure the catsup is not too sugary, otherwise use tomato sauce and a 1 teaspoon of vinegar.
