Bangkok Bean Burgers with Peanut Cilantro Sauce

Ingredients (use vegan versions):

    1 lb firm tofu
    2 cups cooked black beans, well drained
    3/4 cup quick-cooking oats, uncooked
    1/2 cup red onion, finely chopped
    1/2 cup carrots, finely grated
    1 teaspoon plus 1 teaspoon grated fresh ginger root
    2 teaspoon tarmari or soy sauce
    2 teaspoon packed brown sugar
    2 cloves garlic, minced
    1 to 3/2 teaspoon red pepper flakes
    vegetable oil
    flour for dusting thin slices peeled

Directions:

Carol Ann Islam of Corvallis, Oregon, sent this recipe for a burger with a touch of Thailand.

Squeeze tofu in paper towels to discard excess water.  Mash tofu in a large bowl.  Add rest of ingredients except for oil, flour, and cucumbers.  Mix well.  Lightly brush both sides of patties with vegetable oil and dust with flour.  Brush gill rack with oil.  Cook over medium-hot coals about 4 minutes on each side.  Serve on toasted buns and top with Peanut Cilantro Sauce and cucumber slices.

Peanut Cilantro Sauce

Ingredients (use vegan versions):

    3 tablespoon natural crunchy peanut butter
    3 tablespoon fresh lemon juice
    1/4 cup fresh cilantro, minced

Directions:

In a small bowl, blend peanut butter and lemon juice.  Mix in cilantro to combine.


Wow! is all i could think. This sounds awesome. I will make it for dinner tonight and will let you know tomorrow how it turned out!! Yahoo, I have settled the dilemma!!

WE made this for dinner... wow, very good. The peanut-cilantro sauce came out a bit thick, so it was more like a spread, but that could be the peanut butter we were using. Thank you. Any more Thai recipes?!!

This sounds very inspired. Howe'ver, I think the sauce would benefit from some crushed red pepper flakes, finely minced garlic, finely minced shallot, finely minced ginger and a bit of toasted sesame oil (or water, if one wishes) to thin it out some.

Hello!!  We sampled this recipe (Anya and Freya). It was simply divine.  Try adding some banana chips. I know it sounds odd but it improves the texture and flavour.  From two daaarling english roses xxxxxxxx

Thanks so much for this great recipe.It is my first time eating a Tofu burger and the second time I have eaten Tofu.I tried it but added a tsp of hickory liquid smoke and left out the Ginger and added a little herbs as well.It was great.Next time I will add the ginger and experiment with it.THANKS

I made this dish last night--excellent!  After having read some of the other comments, I decided to get a bit creative:  since the sauce was thought to be too thick I mashed 2 seeded, peeled mangoes, juiced 2 small oranges and one lime.  I also kicked it up a bit by increasing the red pepper to taste, as I prefer hot Thai food (almost a tablespoon!).  I also increased the cilantro.  I doubled the entire recipe, and that volume made enough for 10 generous burgers.  My husband, who'se hereditary cholesterol was up to 303 (!) enjoyed two of them.  Were both so impressed with the creativity found @ this site.  I am quite a good and inventive cook, and I'm finding many of you folks here are, too!  Thanks for an excellent source!

I made this the other night and, though it was fairly tasty, it wasn't good enough to justify the trouble making it.  Suggestions:  Add salt!!!  Cut WAY back on the lemon juice in the cilantro sauce.

These are great!  When I make burgers for the family, this is usually the recipe I use.  For the sauce, I add red curry paste and coconut milk.  I always bake the burgers on a cookie sheet-it is faster and healthier than frying, and I don't have to worry about them falling apart.  I just broil until brown on each side.  Yummm!

These burgers really fell apart -- they may need some oil added to them to help hold them together.  They were also a bit bland -- try added different seasonings to spice hem up; cilantro would probably be a nice addition to the burger itself.

This was pretty good, but a bit bland. I used an extra half cup of beans because I didn't have enough tofu, and I added fresh cilantro to the burgers like kparsons suggested, and a couple extra cloves of garlic. I also added extra oatmeal to make the patties stick together better. I broiled the patties for four minutes on each side instead of grilling. I think next time I'll add more soy sauce, garlic and maybe some cumin and/or coriander.

This recipe is a good start, but its definitely not perfect. It didn't stick together at all, so I threw about 1/3 of the recipe into the food processor to make a paste, then I mixed that into the other 2/3s.  That made it stick together quite well while maintaining the chunkiness from the rest of the batch. It was also fairly bland, so I added more onion and garlic, more soy sauce, salt, and onion and garlic powder. For the sauce I just used a commercial satay peanut sauce and added fresh chopped cilantro, which really topped it off.

these were really good - very filling and satisfying and healthy.  one suggestion:  i put in a LOT more fresh ginger - at least 2 tablespoons, and the burgers had a ton of flavor and were really good.

I just registered the other day because I have been on here so much lately.  This is the first recipe I've tried and it was the best meat free burger!  I made this for dinner for my husband, best friend, her sister and my sister and they all loved it.  Even my lil sister who always says I make strange things!  I have found a new staple dish to add to my favorites...

The short version: hotforyou Cheesy Thumbs Up Smitten

The long version: I tinkered with the flavourings a little... used chili paste (instead of flakes), some tomato paste and juice of a lime in the burger mix. I didn't have cucumbers to go with, so I used sliced avocado, baby mung sprouts and mesclun leaves. I couldn't be bothered making burger buns, so I made them into wraps, and they were superbly wonderful. Smiley Despite the fact that I FORGOT TO PUT THE CILANTRO IN THE SAUCE. lol I'm sure it will be even better next time, with all of the ingredients.

Great success. I added lime juice to the mix, cilantro and omitted the ginger and added a  squirt of ketchup.  Topped with sliced cucumbers, avocodo. Thanks for a great recipe!!

I made these tonight also, but mine came out too wet. I knew they wouldn't stick together as patties, so I just kind of crumbled them up and pan fried them. I cooked some kidney beans to use in them, and used lime for the sauce (with some soy sauce and mushroom broth). The flavor was ok, just nothing spectacular (my version).

These are Awesome! however, they would not stay together when cooking. As for taste they are wonderful. I did add some cajun spice, oregano, and some basil leaves, and lots of garlic! They were very spicy but that was because of the cajun spices I added. I loved them!  Smitten  Will have the leftovers for lunch tomorrow. My son,25, non-vegan refused to try them since he saw me put the tofu in, oh well, more for me!

Okay, these are pretty good. First of all, I added 2 or 3 tablespoons of red curry paste in place of the spices. I added fresh basil, the zest of one lime and some cilantro into the patties. And I used one whole onion, grated and half a red bell pepper, minced. Oh, and some peanut butter. Served this in a tortilla with baby spinach. I didn't use the sauce, but instead squeezed lime juice onto each patty.

wow these are great! i couldn't get them into patties for the life of me so i just did it like a stir fry and drizzled the sauce on top. Love the sauce! all the flavors together create something really unique and delicious
