Black Bean Burgers

Ingredients (use vegan versions):

    1 large can black beans
    1/4 cup diced yellow onion
1/4 cup diced red bell pepper
    1/2 teaspoon ground cayenne pepper
    1 egg substitute
    1 cup seasoned bread crumbs
    2 tablespoon fresh chopped cilantro
    2 tablespoon olive oil
top w/ salsa, alfalfa sprouts, &/or guacamole

Directions:

Rinse black beans. In a large bowl, mash black beans then add onion, bell pepper, cayenne pepper, egg substitute, vegan bread crumbs and cilantro.  Blend until all ingredients are mixed well.  Form bean mixture into patties and place on a baking pan or cookie sheet (spray pan with non-stick spray).  Bake at 350 for 10 mins.  Or you can fry them in olive oil.  I recommend baking them. These turned out great. We baked them and then grilled them on our George Foreman grill. Next time, I'd only use a little cilantro -- I think the taste was a little too overpowering. Otherwise, delicious and really nice texture.

I made these burgers for dinner tonight w/a side of the "Spicy fries" recipe also on this site. I used green pepper instead of red because I just happened to have it on hand. I baked the burgers according to the recipe. I topped my 2 burgers w/broccoli sprouts and mild salsa. My husband put sprouts and ketchup & mustard on his. I think that they were a little smushy in the middle, but my husband said they were perfect. Maybe next time I won't make them so thick.

These were delicious! I made mine much flatter then the ones in the picture, but they turned out great.  They have a great flavor and make a great alternative to the store bought meat substitutes.

did you rinse off the beans before you mashed them up???  that makes them more dry...I cant believe you didn't like them, what other recipe did you use?  I would like to try it!!

Great recipe! I just made these for myself and they were so quick to prep and bake! I had mine with sprouts and a whole wheat tortilla with some ketchup. I have 4 burgers for leftovers! yes!!

These have fantastic flavor.  Although, I did cook them twice as long in the oven, and they were still pretty soft.  I didn't think I made them that thick, but I decided to throw them in a pan to get them nice and crispy on the outside.  They were still fairly soft, but I guess that's what you should expect.  They're black bean burgers after all.  But they were so delicious.  My meat-eating boyfriend told me that I should definately make these again.  I also used garbanzo beans in them as well, because I only had half a can of black beans.  They could be eaten alone as bean fritters without the bun, and they'd be fantastic!  Thanks!
