Tacos textured soy protein

Ingredients (use vegan versions):

    1 1/2 cups dry textured soy protein
    1/4 onion, finely chopped
    1/4 red or green bell pepper, finely chopped
    1 clove garlic, minced
    1/2 teaspoon cumin
    dash (or more) chipotle powder, if desired (I love the stuff, so I use a lot)
    -or- 1 chopped canned jalapeno
    3/4 small can tomato sauce
    (use the rest for sauce on top, adding some chopped jalapeno)
    some fresh ground pepper
    chopped tomatoes, lettuce, cilantro, onions, or
    whatever you like to put on top.
    6 Taco shells (this also makes great burrito filling)

Directions:

Soak textured soy protein in water for 5 minutes.  Saute onions, peppers, and garlic. Add textured soy protein, tomato sauce, chipotle powder and/or jalapeno, cumin, ground pepper. Simmer on low heat 15-20 minutes, stir occasionally.  Chop tomatoes, etc. for toppings, mix up some taco sauce with remaining tomato sauce and heat up your taco shells. Meat is done when its real thick (you don't want it oozing out of the taco shells).  Serve with whatever you like best, I usually make a couple sides of vegetables to go with it.

This also goes great with spinach or mixed veggie burritos.

Serves: 2-3

Preparation time: 30 min.


I have made this a bunch of times and my husband and babysitter love it, although I still can't get my three year old to eat it.  I make it without onions or jalepenos and only a dash of chile powder.  Because of the lack of heat I usually perk it up with a good squirt of tomato paste (the kind from the tube) and a couple of spoonfuls of barbecue sauce.  I just wanted to say thanks for what has become a quick and tasty supper.
