Chik Parm

Ingredients (use vegan versions):

    pasta enough for two servings, your favorite shape
    pasta sauce (your favorite kind)
    chopped vegetables (peppers, broccoli - optional),
    2 Chik patties (breaded patties, sold near veggie burgers - check ing. for egg)

Directions:

Cook pasta according to directions on package.
Heat sauce and add chopped vegetables (optional).
Microwave two chik patties according to package directions.

Serve on plate: pasta, chik patty and sauce.

Serves: 2

Preparation time: 20 minutes max


try using vegan parmesan and soy cheese mozzerella style. melt the mozzerella on top of the chicken before putting the sauce on, then sprinkle the whole dish with the parmesan. Smiley its real tasty

I made my own sauce, and added greens, mushrooms, broccoli, and carrots, and used the Parmesan sprinkles recipe.

What do you all use for a vegan chic patty? I'm having trouble finding anything vegan in patty form that would work for this...

Boca has a chik patty that is vegan.  Are they available where you live?

Yep! I use the boca patties. Don't get the organic though (blue box?), they are not vegan. The one to get is the red box..and it says vegan on it! Smiley

This is a great recipe.  I love that it's heartier than just plain ol' spaghetti.  It makes me feel like I am really feeding my kids a great healthy meal and it goes together so quick that I don't stress about whether or not I really have the time to make it!  Thanks for posting this  :)one!

This was tasty.  I used boca chicken patties, and made my own red sauce with lots of fresh basil and garlic, and served over penne pasta, with garlic bread bruschetta on the side.
