Mock Crab CakesIngredients (use vegan versions): 4 tablespoons of brown flax seed (to make an egg substitute)
2 cups of bread crumbs
1 tablespoon of vegan mayonnaise (optional)
1 small onion, grated
1 tablespoon of Old Bay seasoning
2 cups grated zucchini with juice squeezed out
Directions:To make egg-replacer: Pour four cups of water and the flax seed into a large pot. Bring to a boil. Boil down to about 3 cups. Pour out about 1/3 cup of the egg-replacer into large bowl (Try to keep the flax seed from getting into the bowl -- it is ok if some of it does get in though.). (This egg-replacer works very well for a wide variety of recipes. One-fourth cup is equal to one large egg. It can stay in the refrigerator for weeks and can be frozen for future use.)
Mix in the remaining ingredients. Fry in oil until golden brown.
Can be sprinkled with paprika and dipped in vegan tarter sauce.
Serves: 5
Preparation time: 30 Minutes
I made these just last night and got raves! I'm trying to cut down on my use of oil for cooking so I just baked them on an oiled cookie sheet and turned them halfwya through. They came out really crispy on the outside and tasted terrific!

Are the flax seeds supposed to be ground, or do whole seeds work ok?

The flavor of these was excellant, but frying them I don't think was too good of an idea, they fell apart on me, and soaked up all of the oil. I plan to try these again, but next time bake it instead of fry it. But I loved this one. And the egg replacer, that is just crazy, didn't know flax seeds could make a consistency just like egg whites, and it is more nutritous. Why don't they do that all of time, instead of using real eggs? I think if everybody knew about that, the egg business would take a real dip in sales.

By the way, I used ground flax seeds, and the egg replacer turned out perfect.
