The Mighty Mac

Ingredients (use vegan versions):

    1 15 oz can garbanzos, including liquid
    3/4 cup water or vegetable stock
    1 medium onion, quartered
    1 teaspoon sage
    2 tablespoon soy sauce
    1 teaspoon salt
    1/2 cup walnuts, chopped
    2 1/2 cup rolled oats, uncooked
    1/3 cup flour

Directions:

Place garbanzo beans, bean juice, water and onion in blender.  Blend until very smooth.  Pour into large bowl or mixer.  Add remaining ingredients and mix with a spoon.  Let rest 10 minutes to soak up the extra liquid.  Use an ice cream scoop to form patties, using hands or spatula, flatten to about 1/2 inch thickness on Pam sprayed baking sheet and bake 25-30 minutes at 350. -OR- use ice cream scoop to form patties and fry in oil on stovetop, over medium heat 3-4 minutes on each side.  Makes about 17 patties.

Serves: 17 patties

Preparation time: 30-45 minutes, includes cooking time.


Do you need to have the walnuts in the recipe?  I tend not to appreciate walnuts as much as some people.

This recipe is GOOD!!!  Try using pecans, sunflower seeds, pumpkin seeds.  The nuts, I believe, don't really have any binding properties (unless ground) so they just add a little texture and substance.  I'm sure any nut(s) or chopped veggies (low water content) would do!!  Shocked)

these were SO amazing! my non veg boyfriend loved them, too!
instead of nuts i used avocados (i have an abundance of avocados from our tree at the moment), which helped the batter stick together well, too. and for flour, i used a combination of chickpea and oat flour since i had some lying around, which gave them a slightly nutty flavor. thanks for the recipe!

This is really a great burger.  These by far stay together the best of all I have ever made.  I didn't put any walnuts in it, I didn't think it needed it. I put a whole onion in and I didn't use a can of chick peas so the onion juice made up for it.  I added some spices to it as well.  Also a shreded carrot since I like to put it in everything just to add alittle more nutrition. Very good burger though.

I thought these were pretty good. I used ground pecans, and only 1/4 of an onion. I also added cayenne pepper, garlic powder, more salt, and pepper. The flavor was really good, but they didn't stay together very well (fried them), and I tried really hard to be gentle. I had a few nice patties... blankstare

I baked my burgers, and they turned out pretty soft.. any ideas why that might have happened? Maybe I should try pan-frying them next time?

The burger looked and tasted really good, although next time I think I'll add less onion, more spices, and I won't replace the walnut with cashews.

I didn't have the sage, walnuts, or the rolled oats so I used garlic, Italian seasonings, quaker oats ,and sliced almonds in ours. The batter was very sticky so I had to add lots of flour. Because of the flour, it left them kinda white so I brushed on (both sides) a mix of soy sauce and some of the smoking flavor stuff. They were delish. I think it made over 20 for us but they were very thin. It had a wonderful taste and were very filling. Thumbs Up

Oh yeah and I pan friend them with a tiny bit of olive oil. Yum!

These are great and you can do so much with them! I added 3 tablespoons chopped parsley, 1-4oz can green chilis, teaspoon of garlic powder, thyme and paprika. I also added about 1/4 cup vital wheat gluten to help hold them together, after having added the chilis. I baked them for 20 mins, flipped them and baked them for 10 mins. After, I fried them in a little bit of canola oil, to make them crispier. Very good, 5 stars! Thumbs Up

I really enjoy these MACs.  They are moist and very flavorful.  I followed the recipe with the following exceptions:
I added about 1/2c of shredded carrots and 1/2 c of chopped green bellpepper, 1/4c of brown rice (I had some cooked that needed to be used), 1 tsp. of garlic powder, thyme, and Italian seasoning, 1-1/2tsp Bakon (a smoked yeast flavor powder), and I did not have any soy sauce nor braggs/molasses to try to substitute with so I added 1/2 tsp more of salt, and my burgers were lighter than they would of been if I added braggs.  I also had the unbaked mixture sit in my fridge for about 1 day because I was unable to bake them until later.  I really enjoyed these burgers and will make them again.

These are amaaaazing. I've had these for lunch every day this week, and some days dinner. Instead of walnuts I use sunflower seeds, and I'm out of rolled oats since the first batch of these I made, so I just use quick oats. I usually have to add 1/2 cup or more to make them less squishy and easier to work with. That's really all that I change. They freeze very well.

These are fantastic!  I made them last night for a snack.  I added a little bit of vegan worcestershire sauce, as well as some extra spices.  Also added a smidge of vital wheat gluten.  I baked them for half of the time, flipped, then baked the remaining time- then pan fried them.  I didn't modify the recipe too much because I wanted to see what they tasted like on their own.  And they're great.  But I definitely see how many different options there are for these.  I'll probably make a spicy version next.

Hmm,I wanted to try these,but our blender is broken Sad.Another recipe I have for a carrot,rice,nut burger and other burger recipes call for it.I may not get a blender until Christmas,so can  I not just pound all the ingredients together(like the chickpeas) as well as finely chop vegetables,would that work and hold together? I've never made my own burgers before.I've had to try cooking since going vegan Grin.
