Tofu-Nut Loaf

Ingredients (use vegan versions):

    1 large onion, chopped
    3 tablespoon non-hydrogenated vegan margarine
    2 cup mashed extra firm tofu (one 1-pound brick)
    2 cup whole wheat vegan bread crumbs
    1/2 cup chopped nuts
    1 teaspoon sage
    1 teaspoon salt

Directions:

Simmer onion in margarine until golden.  Mix rest of ingredients thoroughly and combine with onion.  Pour into 9x13 baking dish.  Bake at 350 until brown, about 40 minutes.

Serves: 8

Preparation time: 30 min, baking time 40 minutes


I made this for my family, and it was delicious. It made the perfect amout of food for two adults, and two kids, when served with a small side dish of some nature. I added a few T. of Tomato Paste mixed with water to create a spaghetti sauce like consistency, and added this to the mixture before putting it in the oven. What a hit! Everyone loved this!!

Made this for dinner last night with some stuffed bell peppers, (Four adults we needed a little more then what this made).  Was pretty good but a little tame I think next time I will try the tomato paste to and a few spices Smiley

I made this tonight and it was really, really good.  I used crushed whole wheat crackers for the bread crumbs, diced cashews for the nuts (2-3 times what was called for), and 2 tsp of thyme instead of 1 tsp sage.  I also added about 1 tsp of garlic powder.  I am not a very good cook, and it still turned out excellent!

yummmmmm.  Mine did turn out really dry and crumbly but the taste is delicious.  is it supposed to be dry and crumbly or did i do something wrong?

Loved it!  sauted the onion with some mushrooms and it was great, but had trouble keepin it together.  maybe i'll use some ground flax or egg replacer.
