Yummy Apple CrispIngredients (use vegan versions): Filling:
6 cups peeled and thinly sliced apples (any kind)
1/3 cup light brown sugar
1/3 cup 100% apple juice (Santa Cruz brand is good)
2-3 tablespoons all-purpose flour
1-2 teaspoons cinnamon
Topping:
11/2 cups uncooked oatmeal (quick or old-fashioned)
3/4 cup light brown sugar
1/3 cup margarine/butter
2-3 tablespoons plain soy milk
3 tablespoons all-purpose flour
Directions:1.)Heat oven to 350 degrees.
2.)Combine filling ingredients and stir until all the apples are coated. Pour into a 9 inch glass baking dish. (Use a bigger dish if you have one.)
3.) Combine topping ingredients until blended. (You may need to use 1 tablespoon more of soymilk if its too dry, but it should be crumbly.) Sprinkle evenly on top of apple mixture.
4.) Bake for 30-40 minutes or until topping is crispy and apples are tender.
This is very good on its own, but if you want to indulge more, serve with vegan ice cream or whipped cream. Also good with vegan yogurt.
Serves: 10?

Nice recipe. I always add powdered nutmeg and cloves and cardamom to mine for a more spicy flavour. Just a note: conventional apple juice is filtered in the same way that nonvegetarian wines are-- with isinglass, so isn't really vegan (although all the isinglass is removed before pacakging). Go for the cloudy stuff or a brand that specifies that its suitable for vegans.

I respectfully disagree with the idea that we should avoid most apple juice. Most things in our lives (from contact solution to medicine to bike tires) aren't 100% purely vegan, so as long as its roughly 99% vegan, we shouldn't bother spending our time and alienating the movement by pointing every little tiny non-vegan thing out. This is why so mnay people sympathetic to veganism don't become vegan-- if they can get to the point where they can swear off dairy and egg ingredients, its still not good enough for some people. How many animals does this save?

In the end of the day, the extent of veg(etarian)anism is everyones own decision. For example, I'm not 100% vegan, but I still don't want to drink alchohol or juice that was filtered through fish. It isn't about alientating or putting people off, its about informing people, so they are able to make their own decisions.
