Absolutely in love  Smitten... Even my meat guzzling dad ate it.. Definitely could have been firmer though, I baked mine for about  1hr30min, and I used 1 cup bread crumb, 3/4 cup burger crumbles, and 2 flax eggs. next time I'll do the entire suggestions of breadcrumbs + the burger crumbles..
As everyone else said it is HEAVEN out of the fridge the next morning.. Can't wait to make a sandwich and take one to my vegan best, we've been craving meatloaf for so long.. So happy lol.

I finally got around to trying it, and it was great!!  I tried it out on on myself and my husband, but now know I can make it to serve to others too.  A few changes I made:  I used potato starch as an egg sub (I didn't have arrowroot), I used almonds instead of walnuts, I didn't use mushrooms, I used 1 cup breadcrumbs, and about 2 cups of soy burger crumbles.  I served with vegan gravy and mashed potatoes and veggies.  Great meal!

has anyone tried spliting the loaf into two loaves so that it wouldn't be as mushy? I think i'll try that when I have the time to make the recipe.

I added the extra rice. My boyfriend really likes this, and we both think it tastes like stuffing (like Thanksgiving stuffing). It's his favorite mock meatloaf. Pretty yummy! The walnuts make it awesome.

I used everything in the recipe except for celery. I also did the 2 boxes of tofu and less bread crumbs. Also the only onion soup mix I cold find was Lipton and non organic and had bad stuff in it, so instead I used some minced onion seasoning and onion powder. It was very good tasting. I was a little concerned when the mixture was white before baking, but it turned out nice and brown when it was done. I think next time I will bake it for little longer than 1 hour and 15 minutes, maybe this will help it stick together better, but all around very delicious meal!  Thumbs Up
