Cranberry-Orange Bread

Ingredients (use vegan versions):

    2 cups all-purpose flour
    1 cup sugar
    1/2 teaspoon salt
    1 1/2 teaspoon baking powder
    1/2 teaspoon baking soda
    2 tblsp vegetable oil
    hot water
    1/2 cup unsweetened orange juice
    1/2 tblsp orange peel, grated
    Ener-G Egg Replacer for 1 egg
    1 cup cranberries (fresh or frozen)
    1/2 cup walnuts, chopped (optional)

Directions:

Preheat oven at 375 F.

Grease and flour loaf pan.

In a large bowl, mix dry ingredients (flour, vegan sugar, salt, baking powder and baking soda).

In a small bowl, add walnuts, cranberries and 1/2 cup of dry mixture to coat the nuts and berries.

In a measuring cup, add oil and top-up with hot water to make 3/4 cup.

In a medium bowl, mix oil/water mixture, orange juice, orange peel and Ener-G Egg Replacer.

Combine liquid mixture to dry mixture (don't overmix!).

Fold in nuts and berries.

Bake for 1 hour.

p.s. I gave this bread away as Christmas presents last year and it got rave reviews!

Serves: 1 loaf

Great recipe.  I reduced the sugar called for by one third and mixed white and whole wheat pastry flour half and half, and it still came out very tasty.

I reduced the sugar to 3/4 cup, doubled the amount of orange peel, and used whole wheat flour instead.  The bread was done in 45 minutes and the flavor was excellent.

I'm one of those people who look at everyones comments before trying any recipe to see if it is worth it - so for all those who haven't tried this yet: this is definetely worth a try!  I modified it a little by making this as muffins and drizzling a little powdered sugar/orange juice glaze on top - excellent recipe!  I also followed anothers advice and added twice the orange peel - that gives it great flavor.

This seemed way too wet.  I liked the taste very much, but something needs modifying so that it is more like bread and less of the consistency of fruit cake...more flour?  Perhaps I'm missing something...

This is fantastic bread, absolutely delicious.  Its a bit sweet (due to the amount of sugar), but you need that to counteract the tartness of the fresh cranberries.  I recommend chopping up the cranberries roughly beforehand, rather than adding them whole.  I will definitely be making this to give as a gift for the holidays.

This bread was wonderful. I used 1 cup whole wheat flour and 1 cup whole wheat pastry flour. I cut down the sugar to 3/4 cup, added 1/2 cup soy milk at the end, and substituted 1/2 cup of apple sauce instead of the hot water/oil mixture. The cranberries & orange flavor combination really worked well & the walnuts added that extra oompf!

I made two loaves following the recipe, except for leaving out the nuts and using dried cranberries soaked in a bit of hot water to plump them up.  (that's what I had.)  I made two loaves as blueberry-lemon bread using frozen blueberries in place of cranberries, soymilk for orange juice, lemon zest for orange peel, and a tablespoon or so of lemon juice.  that version was extremely popular as well.  YUM!  this recipe RULES!  oh, and one hour was too long for my oven - 45 minutes was good, before they started to burn.  burnt-on-the-bottom loaves were still a big hit, though.  thank you for a lovely, adaptable recipe!

I've made this several times exactly to the specs listed, and it has turned out great every time! A few times, I've made muffins, and those are great too. It's not the holidays until I've made this cranberry bread for family and friends!

This is an awesome recipe. Instead of EnerG I used flaxmeal and all I had was dried cranberries so I used them. The loaf turned out splendidly. Looking forward to making it with the fresh cranberries too.

This was pretty good. It had a tough crust on it so next time I might cover it with something for the first half and not leave it in so long, because I was hoping for a cakier texture. More orange rind tooo!

Amazingly delicious. I made this for Thanksgiving Day breakfast. I kept the recipe pretty much as-is, except I used applesauce for the egg replacer. I did make a glaze (1 cup powdered sugar, 1 tsp vanilla extract, 2 Tbsp orange juice), which I HIGHLY recommend. I will totally be making this over and over again. Thank you!!!

It was really good! I took a chance and doubled the recipe, glad I did. Instead of just cranberries and walnuts I used dried cranberries, walnuts, pumkin seeds, and chopped dried apricots...also didnt use gratted orange peel cuz lazy. Even my parents liked it, which doesn't normally happen!

 Smiley  I made this recipe into muffins for Christmas morning and they were wonderful.   I made the recipe as stated.  I used fresh cranberries and I did chop them  in half.   I used the orange glaze on top.   Yummy!

This is delicious! I made two of them of both of the homes i had to visit for the holidays and i got great reviews for both! I used 3/4 cup of sugar and doubled the amount of orange peel. Also instead of the ener-G egg replacer (i dont personally like using it) i used 1/4 cup of silken tofu blended smooth as a sub. Wonderful!
