Caesar Dressing

Ingredients (use vegan versions):

    3 tablespoon olive oil
    1 cloves raw garlic (chopped)
    3 cloves roasted garlic (chopped)
    2 teaspoon dry mustard
    2 teaspoon Worcestershire sauce
    2 tablespoon white vinegar
    1 tablespoon lemon juice
    1 tspn fresh ground pepper

Directions:

Serves: 4 - 6.

Preparation time: 15 minutes.

I use a braun hand blender for this but you could use any blender or just mix in a bowl with a whisk.

Put oil, garlic, dry mustard and pepper in first and mix.  Slowly add vinegar, Worcestershire and lemon juice.  Last put in pepper to taste.  Whip it up until creamy.


You can also add a small amount of Nayonaise to give the dressing a creaminess (that would originally come from egg) that seems to blend the flavors better.

Hi!  Your recipe sounds great, but is there anything I can use that can substitute  vegan Worcestershire sauce??  Please reply back!!

This is an excellent dressing!  I used brown rice vinegar instead of white vinegar, and all raw garlic rather than a mix of raw and roasted.  Today for lunch we ate it on a salad of chopped Romaine, thinly sliced red onions, kalamata olives, diced avocado and croutons; I'm going to make the same salad for dinner, that's how much we liked it!

i'm trying this today. as far as vegan worcestershire goes, i use this version from vegweb:

    1 part red wine vinegar
    1 part blackstrap molasses
    2 parts soy sauce (to taste)

Oh my!! I am craving salad all the time now! I LOVE this dressing! I used regular vinegar, dry mustard, vegetarian worcestershire sauce, black pepper and 3 bulbs of garlic (none roasted), fresh lemon juice and the olive oil!!! So delish! DH loved it too!

My version of this is good! I didn't measure anything, and used the posted recipe for Worcestershire sauce (which I've used before), 4 raw garlic cloves, and added a few tbs of veganaise. I don't really think it's "Caesar" like...but it's very tasty.
