Oil-free Dill Dressing

Ingredients (use vegan versions):

    2/3 cup water
    1/4 cup white wine vinegar
    3 tablespoon powdered fruit pectin
    1 tablespoon snipped fresh dill
    1 tablespoon sugar
    1/4 tablespoon garlic powder
    1/4 tablespoon dry mustard
    1/4 tablespoon pepper

Directions:

In a screw-top jar, combine all ingredients.  Cover; shake.  Chill up to 3 days.  Shake before serving.  Makes 1 1/4 cups.

I found this recipe in the Mothers Day card my son gave me.

so i started out making this recipe.. i followed it exactly, but the end result was very bland for me.. so i went crazy and modified it alot and the result is quite tasty.. at least this recipe got me to try a new dressing or at least gave me an idea or direction to head in  Smiley .. here is what i did:

i followed the recipe except for leaving out the fruit pectin and doubling the spices

then i made the recipe again, but:
instead of water i used 2/3 cup of blended soursop fruit to give it thickness like the fruit pectin would.. doubled the spices again
leaft out the sugar (soursop tastes like a lemony pineapple and has some sweetness in it)
1 teaspoon salt
about 3 tablespoons oil
about 1 tablespoon yellow mustard
about 10 small leaves of fresh basil - chopped
about 10 small leaves of fresh mint - chopped
about a 3 inch piece of cucumber - diced

i then combined this with the original recipe and blended everything in a blender for about a minute until everything was smooth..

it is actually really good Cheesy
