Almond Butter

Ingredients (use vegan versions):

    whole raw almonds
    salt, optional

Directions:

** Of course, this may also be made using the humble peanut and very good it is too.

Using no oil, toast the almonds in the oven, stirring every few minutes, until beginning to change color.  Cool.

Place in a food processor and grind until very fine.  Continue to process until the almonds begin to release their oil, resting the motor from time to time.  Process until oily and smooth.  Store in an airtight jar.  * Dont be tempted to think the oil will not release.  I assure you it WILL happen.


Oh yeah, yeah, yeah, this is so cool! I will never need to buy expensive almond butter again! Since I am trying to eat as many foods raw as possible I did not roast the almonds, and it still worked great. Thank you for this simple recipe!

I was so excited by this recipe that I didn't read the instructions and just put them in the mixer! I have ground them to a dust and no oil!!  Any ideas how they can be saved? rather than just adding them to a curry!

prn- I think you just have to mix the dust in the processor for a while and then the oil starts to come out. I made this recipe a few days ago and it took about 10-15 minutes of processing the almond dust until the oils started to come from them to make it creamier. Though if you didn't roast them first I'm not sure if it will still work.

I just made this today.  I have never had almond butter before, and I thought this was SO good! Great recipie, am going to try to cook with it (or eat it on apple slices!)

My sisters boyfriend and I love pistachios, so I made pistachio butter.  It only took five minutes in the food processor for it to be done.  Its really good and simple.  We love it!

What kind of processor did y'all use? I want to start making my own nut butters and need to buy a one. On Amazon they describe them as either "light" or "heavy" and if anybody could shed some light on whether one or the other can be used, that'd be wonderful.

oh_homely: my food processor is a small-ish model (Breville).and not especially high powered. my guess is that any model would be fine.  i suggest that you post this question on the Q&A forum on this site. i feel sure you will get some helpful responses. cheers!

lllllovely recipe
it only took a few minutes for my almonds to get all buttery and yummy, and the whole house smelled good from the toasted almonds. also, i didn't put any salt in.

I used dry roasted salted almonds from whole foods. when the butter was creamy i added a handful of almonds to make it chunky:) yumyum

wow!  i am so delighted to find the 2 photos.  and very pleased to see the consistently positive comments.  this recipe is proof that, with the help of a food processor,  it really is very simple and easy to make delicious nut butters from nothing more than the nuts themselves.  oh, and salt, if like me you prefer it that way.

yea, thanks for this - i knew you could make almond and peanut butter but i didn't know how. now i won't have to shell out like.. 8 bucks every time i want nut butter that isn't uber-processed.

I just tried this one with pecans! Wow! It didn't even take that long- maybe 5 minutes- and my electric mini food chopper is actually pretty cheap so I'm surprised how easy it was! Wow! I think I'm inspired to try to experiment more! I think next time some smoked almonds or coconut! I can't wait! So cheap easy and yummy! Cheesy Look out world!

We are doing no salt and no sugar in addition to no meat and I had the hardest time finding peanutbutter that would suit our needs.  Then I thought to look here--and now I have an awesome recipe that I can use with any kind of nut I like!  Awesome!

This stuff is great!  Ok, I admit it: I made it with peanuts (one batch untoasted, one batch toasted- the untoasted does not taste much like anything.  Toasting makes this waaay better.) and I added sugar (about 2 tablespoons raw sugar dissolved in a little water) and salt.  It's like tradtional natural peanut butter, only a little grainier- I assume that's my 5.00 'food chopper' and not the recipe, though!  However, I also think that's why it does not seperate.

I used wild hazelnuts and OH MY GOD IT TASTES WONDERFUL! Makes cracking the nuts open one by one worth it...

Such an easy, tasty, and healthy recipe - I love it. I'm going to try pistachios next!

This is awesome!!! FYI you can do this with about any nut or seed. I usually go for sunflower/pumpkin seed butter and spread it all over my pancakes and then some syrup....omg

This is awsome and so much cheaper than buying it at the store. I knew when to stop (i did use regular old peanuts) the food processor because it rolled itself in a ball strange huh?. I want to try this with my cashew toppers!!! It smells so good and tastes like natural like when u eat fresh veggies just plain and u can taste who natural they are.
