Sweet and Sour SauceIngredients (use vegan versions): 1/2 cup rice vinegar
1/2 cup dark brown sugar
3 tablespoon cornstarch
2 tablespoon soy sauce
1 tablespoon lemon juice (or pineapple juice)
Directions:Whisk all together. It will thicken when cooked.
Great mixed with sautéed veggies and some pineapple chunks and served on a bed of rice.
Serves: about 10 oz.
Preparation time: 10 min
If I wanted to make this ahead of time and store, how long would it keep in my refridgerator in a jar with a sealed lid?

I'm not totally sure, but since its half vinegar I imagine it would last quite a while. At least a month or so?
