Sweet and Sour Sauce

Ingredients (use vegan versions):

    1/2 cup rice vinegar
    1/2 cup dark brown sugar
    3 tablespoon cornstarch
    2 tablespoon soy sauce
1 tablespoon lemon juice (or pineapple juice)

Directions:

Whisk all together. It will thicken when cooked.

Great mixed with sautéed veggies and some pineapple chunks and served on a bed of rice.

Serves: about 10 oz.

Preparation time: 10 min

If I wanted to make this ahead of time and store, how long would it keep in my refridgerator in a jar with a sealed lid?

I'm not totally sure, but since its half vinegar I imagine it would last quite a while. At least a month or so?

This recipe took all of five minutes to prepare and was super-delicious.  I added a few sprinkles of red pepper flakes to the sauce and served it over Morningstar Chik'n strips, veggies and brown rice.  Yum!

 Thumbs Up

This was very good!  I replaced the brown sugar with agave nectar, and used a bit more than 1/2 cup.  Also used about 2 T of lemon juice because I like a bit more tart, citrusy flavor.

Overall super easy and quick to prepare.  Served it over brown rice, stir-fried veggies and Boca chicken nuggets (not vegan but tasty!)....and it reminds me of LeeAnn Chin's Lemon Chicken dish!  My husband said this is one of his new favorites!
