Real-tasting Mayonnaise

Ingredients (use vegan versions):

    1 tablespoon (15 mL) ground flax seed
    3 tablespoon (50 mL) water
    1 teaspoon (5 mL) each: salt, sugar, ground vegan mustard
    dash cayenne
    1 1/4 cups (300 mL) oil
    3 tablespoon lemon juice

Directions:

I'm not vegan, and I've been making my own mayo with eggs for a few months now.  I read about using flax seed as an egg substitute, so I jumped on the idea of adapting my own recipe.  It tastes just the same without the eggs!

- combine the flax seed and water; microwave 10 seconds, then cool to room temperature

- in a blender (or preferably with a hand blender), combine the flax seed mixture, spices, and 1/4 cup oil

- while mixing, slowly add another 1/2 cup oil

- continue mixing and add the lemon juice

- ... still mixing, add the remaining 1/2 cup oil

- store in a jar in the fridge

Notes:

- you can grind the flax seed very nicely in a coffee grinder.

- you could probably make this with an electric mixer or even with a whisk, but it would take longer, and you'd have to add the oil really slowly.

Preparation time: 5-10 min


it works!!!!! very thick and i added more sugar(4 tsps) but it tastes just like the real deal, i used the cream whisk bit on my food processor. for the calorie conscious, warning, it works out over 150 calories for a semi heaped teaspoon but its so thick you can cut it by the same amount of soya milk as you use it! fatttening but yummy, this is the 5th recipe i have tried to make decent mayo,finally i find my mayo heaven!

this did NOT work for me.  i added the oil slowly, i know that's important for it to emulsify properly, but still, i have oil soup.  i guess i could use it as a salad dressing, the taste is good.  i think the blender i used was too wimpy, maybe.

i didn't do mine in a blender, i did it in a food prossessor with the whisking disk people would use for whipping cream etc and it really was perfect. please try this if you try this recipe because its the best i have found in 4 years of searching

I T   W O R K S  !!!!!!  VERY IMPORTANT NOTE !!!!!!!!!!  when i did exactly how its says in recipe i made oil soup YYYYYUUUUUUKKKKKK.... nothing like mayo..maybe i did sth wrong... but .. then I ADDED (to the soup) EXACTLY THE SAME AMOUNT OF FLEX SEEDS LIKE IN THE BEGINNING.  AND REAL MAYO CAME OUT Smiley)))))))))))) TASTY LIKE REAL THING !!!!!!!!!!!!!! Hi-I don't have a microwave. Do you think it will work if I heat it on the stove?

Instead of heating it on the stove, I would just pour hot water over the flax seeds and cool from there. My guess is that the temperature should be very warm to the touch, but not hot enough to burn you if you still your finger in it.

thank you for the recipe..  i followed it but mustve did something wrong cause it turned to soup..maybe it was the olive/sunflower/canola oil mix..or maybe somthing to do with temperatures..  then i tried more flax as basteq mentionned..still soup..didn't want to waste so much nice oil so i had the ridiculous idea of trying to thicken it with cornstarch on the stove..but with heating the oil separated from the rest :)hehe(probly not a good idea to boil oil)..so i cooled the oil and used it to redo the whole recipe and voila!lol..worked perfectly..no idea why..but never give up i say:)thanke,goodays

It works! I used 1/2 the amount salt called for, since that's the amount called for in my favorite egg-based T&T recipe.  I used a stick blender with the blade, but when I later tried it with the whisk attachment, it didn't set up. I also microwaved the flax/water mixture 35" because 10" weren't enough to fully cook it in my (1100W) microwave.

Thank you for this, spydrrrr. Now I can enjoy old-fashioned mayo vegan style!

I just made this. It is yummy, but it doesn't taste like mayo. Too much flavour, IMO. I could really taste the lemon, especially. I only added 1/2 a tsp of salt and way less oil than it asked for. I only added less oil because so many people said it turned out soupy. I just went little by little emulsifying while I went. I don't know how much I ended up using--probably less than 3/4 cup. Maybe that is the reason there was too much flavour  Tongue Wink.

Mirrya, if this goes bad I'll let you know.

Hey great recipe!  I made it pretty much as you instructed, minus some lemon and salt.  I used a blender (a cheap one from Loblaws), and it turned out beautifully!  Thanks for the great recipe.

Thank you so  much for sharing this!!! It worked awesome. I did end up not adding the full amount of the oil, as I was happy with the results before then and had more than enough for what I was doing. I made this in my Vita-Mix at a medium speed and added the oil so gradual that it was really only a trickle. Perfect consistency!

I'm so happy to have found this recipe... being not only vegan, but having soy sensitivities as well, I thought mayo was a thing of the past for me. No longer!

This is the recipe I've been looking for in a long time, and have tryed alot of other way too make vegan mayonnaise, by this recipe is by far the best. Th only note is that when I made it today,(for the first time), most of the flax seed ended up hold in the mayo. Have anyone else experinced that The next time I'll try grounding the flax + plus water, and then follow the recipe. Hope it works.
