Artichoke Dip

Ingredients (use vegan versions):

    2 cans of artichoke hearts
    Nayonaise
    soy cream cheese
    whole wheat pita bread
    optional: frozen chopped spinach, thawed and drained
    vegan parmesean cheese

Directions:

This is my friends favorite food. They all beg me for it when they come over. :-) Preheat the oven to 375- Open and drain the artichoke hearts. Then cut them up into little pieces (Howe'ver small you want) and put into a baking dish (I use a glass pie dish, which is the perfect size) Then add approximately 4 tablespoons Nayonaise and 2 tablespoons vegan cream cheese, and stir together.  You can add more or less to taste, but the artichokes should be coated so they don't dry out when you bake them. If you want, you can also add chopped spinach at this point, just make sure if it was frozen that you drain it really well first.  Also, you can add a little bit of vegan parmesean cheese. Once everything is mixed together, stick it in the oven for 15-30 minutes until everything is hot and gooey. If you want to leave it in a little longer the top will start to get a little crispy.

Serve with warm whole wheat pita, or, if you're hungry and desperate, its also good on vegan crackers or tortillas. I'm not vegan, so I usually use regular cream cheese but I do use nayonnaise and veggie parmesean, both of which are great in this recipe. :-)

I'm not a huge fan of the taste of mayonnaise, even the vegan stuff, so I usually cut back a little on that. Next time I may add a tiny bit of plain soymilk when mixing to make it a bit easier to stir.  Also, I tried this last night with two bunches of roasted asparagus cut into little pieces instead of artichoke hearts. Not the same thing of course, but I went a little overboard on buying asparagus last week because it was $0.98 at the grocery store. The dip turned out great!

Since you add the ingredients as you go, it's hard to mess this one up.  I added some chopped spinach, onion powder and garlic powder - it all came out very well!

i just added some granulated garlic and salt and pepper, and it made the recipe ten times better.  my mum and i LOVE IT!

Yum.  It does need a little more flavor, I used some garlic and onion powder but not nearly enough.  It was delicious; my non veg husband ate it up.

This is really good.  I HATE nayonaise so I used veganaise insteadl.  I use one can of artichokes and add more cream cheese to get a nice cheesy flavor.  I also add spinach, salt, garlic powder, onion powder and sometimes pepper, if I want a little kick.  I serve it with chips and  prefer this to cheese based artichoke dip Smiley
