Plum Salsa

Ingredients (use vegan versions):

    4 cups chopped fresh plums ( any type should do- I used some from my friends backyard
    tree)
    1 peeled, diced papaya
    1 bunch chopped green onions
    5-10 diced tomatillos
    1/2 cup chopped cilantro
    1/4 cup chopped parsley
    ~1 finely chopped jalapeno or other hot pepper
    2 tablespoon brown sugar
    3 tablespoon white wine vinegar

Directions:

Combine all chopped ingredients in a large bowl.  Mix brown vegan sugar and vinegar, then combine.  Chill before serving.

Serves: many

Preparation time: 30-60 minutes

this recipe is sooooooooooooo good! i made a tonne and my roommates and i still managed to devour it within one night! five stars  Grin

The combination of all the flavors is very pleasing.  I used red wine vinegar instead of white and omitted the green onion, all of the other ingredients I kind of eye-balled to suit my taste.  Really chunky but a great, fresh, fruity salsa!

i LOVE this recipe and use it (w more plums and any tomatoes, sometimes i substitute the papaya for berries too) all the time!
