Peppermint Chocolate Chip Cookies

Ingredients (use vegan versions):

    1/2 cup sugar
    1/2 cup brown sugar
    2/3 cup canola oil
    1/4 cup applesauce (or 1 egg substitute)
    2 cups flour
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1 1/2 cups crushed peppermint candy (I use peppermint sticks)
    1 1/2 cups vegan semi-sweet chocolate chips

Directions:

Pre-heat oven at 350 degrees Fahrenheit.  Mix sugar, brown sugar, oil, egg replacer in a large bowl. Mix flour, baking soda, salt in another bowl. Add 2nd bowl to 1st bowl. Add chocolate chips & crushed peppermint.

Drop on un-greased cookie sheet. Bake in the oven for about 8-10 minutes.  Keep an eye on these because sometimes the peppermint will seep and burn on the pan.

*I recommend not using any type of vegetable shortening for these cookies.  They will turn out dull and flat.

Makes: 2 dozen if shaped small, Preparation time: 15 minutes, Cooking time: 8-10 minutes

Just made these the other night, and they're quite good. I used these individually-wrapped pillow mints and their texture is great, very crumbly. The dough was very dry at first and wouldn't stick together at all, but I added another Ener-G egg replacer and it began to stick better. =] Very tasty and addictive, a great holiday treat!

so, are they any peppermint candy sticks that don't contain unrefined sugar? i'd love to try this recipe! or is there a way to use peppermint extract in place of the peppermint candies?

I made these the other night and they turned out to be the best vegan cookies I have ever made. I am allergic to wheat so I used spelt but would like to try them with other flours like rice next time. I also used the applesauce and the egg replacer and they tasted lovely!

secondbase; YES you can sub. mint flavoring/extract for the candies and use any non-refined sweeteners[maple syrup, honey if you allow, or agave, etc.] Most refined sugars use bone char to whiten them, some don't but the others are more healthful and who needs coloring anyway? YUM I LUV mint & chocolate-I use carob to avoid caffeine.

okay, i'm gonna take a shot at adding peppermint extract to this. i guess i'll start with 1/2 tsp and taste test it till it works. i'll let you know how it works out since i'll be bringing them to a BBQ/Potluck

i am never going to make this recipe again. i ate nearly the whole batch by myself. i felt so guilty afterward, but oh man were these good. i used peppermint extract and it was great. i imagine the sticks give this great texture, though

I made these cookies for dessert tonight. I had some peppermint sticks in the cupboard from a while back. I tried to crush them in a ziploc w/a butter knife handle...that wasn't enough. I tried a hammer...these things were so old and stale that I could not crush them w/any amount of force I could exert. So I decided to take the poster's suggestion of using peppermint extract instead. I used 1 tsp of it. After mixing all the ingredients, it did look sort of crumbly, so I added another egg replacer, as someone else suggested. The flavour of these was amazing, but very rich. I do not know how that poster ate the entire batch, my husband and I could only eat 2 cookies each. These probably would be even better w/the crushed candy..maybe next time.

I took a couple of these to my boss today. He said that he thought all vegan cakes/cookies would be very dry because there aren't any eggs in them, but he was shocked to find that these were the most moist, chewy cookies he ever ate! Everyone else in the office was jealous that they didn't get any!

I made these the other night... and they were wonderful -- the batch I didn't burn, that is.

They did turn out flat, though... maybe because I used vegetable oil instead of canola oil.  (But it isn't vegetable shortning, which was warned against...)

I used a hammer to break up peppermint candies (the round ones) and I used cocoa powder instead of chocolate chips, as I could not find any non-dairy ones (and figured baker's chocolate was NOT a good idea...)

I will have to make these again.  IS is the vegetable oil that caused this to be so flat, though?

These turned out pretty good. I used 1/2 tsp peppermint extract, because I didn't have any of the peppermint candy, and applesauce instead of the oil.

what i gather from this is: 
these dyes used in food are way processed anyway....animal derived or not, i'm not sure i want to put anything in my body that couldn't be picked directly off of a plant...

was just wondering...could i just use one full cup of regular sugar in this recipe? i just don't have any brown sugar and don't often use it...hhmm...maybe i'll just go pick some up though because these sound great. anyway, if i needed to would i just be able to make up from the brown sugar with plain sugar? thanks.
