No Bake Peanut butter Chocolate Oat Cookies

Ingredients (use vegan versions):

    1/2 cup margarine (Earth Balance)
    2 cups sugar (white or brown)
    1/2 cup soy milk
    4 tablespoon unsweetened cocoa powder
    1/2 cup peanut butter
    1/2 teaspoon vanilla extract
    3 cups quick cooking oats

Directions:

I like to make this recipe when I want something sweet in a hurry. Vegans and non-vegans alike love these!

1. In a large pot, bring margarine, sugar, milk and cocoa to a boil.  Stirring constantly, let boil for 1-2 minutes until mixture is completely melted. Do not over boil.

2. Take mixture off heat and stir in peanut butter and vanilla until completely melted. Stir in oats.

3. Drop teaspoonfuls of the mixture onto cookie sheets lined with wax or parchment paper and allow to cool. When cool, turn cookies over to dry the bottoms.

4. Store in an airtight plastic container in the refrigerator.

Enjoy!

Serves: Makes: 24 large or 48 small cookies

Preparation time: 5 minutes

At the end of step 2, after the cocoa/milk mixture has been boiled and the peanut butter and vanilla has been added, it says stir in oats.  Hope this helps.

Easy, addictively tasty sweet treats!  I adjusted the recipe only slightly by doubling the vanilla to 1 t , slightly reducing the sugar, reducing the cocoa to 3 T, and adding a dash of salt.  For the peanut butter, I used natural cruncy unsalted.  This made 30 cookies for me.  I'm sure I'll be making this one again.  The ingredients are so basic that I almost always have everything on hand.

My kids and I LOVE this recipe! I drop the dough into paper muffin cups and then when the kids want one it is easy for them to peel it and eat!

i do 1 teaspoon of vanilla also..and sometimes i get sassy and substitute cream cheese for the pb and that is mega delicious!!!

these cookies rock! i have made two batches this week and although i havent been able to try them myself (allergic to peanuts and gluten) all the omnis in my life ate them up! thanks so so much!

These are excellent. I think the recipe is right on. Though, I did make a slight change- I used chocolate soymilk and raw cane sugar which melted great.

Mine never became "cookie" like.  Huh They stayed wet and gooey...but my kids ate them all anyway. Did I do something wrong?

would this work with something like pea-nut butter or soy-nut butter? I'm allergic to peanuts, but I remember these from when I was a younger and not allergic, and they were sooo good back then!

These turned out amazing!  Everyone who ate them (I'm the only one that is vegetarian) loved them!  They took about a day to set, though.  I'm not sure if it helped or not, but I set it between two pieces of waxed paper after a few hours.

I did these with slow cook (chopped them up a little) oats and left out the peanut butter/nuts and used brown sugar (HAIN, vegan)  Halved the recipe and used only 1 cup of the brown sugar.  When I added the oats I left it on the heat while I was adding and stirred for 2 minutes to help cook the fuller oats.  After about 30 mins of cooling on parchment paper I put them in the fridge.  I woke up and they were all gone but one...   They are awesome, like Oat Haystacks.

Isn't the rule for raw food that it not go above 115F?  If there's boiling involved, then I don't think this would count as raw food.
