The Most Fabulous Frozen Chocolate PB Cookies on Planet Earth!

Ingredients (use vegan versions):

    1/4 cup light soy milk (try to use plain b/c cookies could be too sweet if you use sweetened milk)
    2 tablespoons cocoa powder (unsweetened)
    2 tablespoons sugar or vegan artificial sweetener equivalent
    1/4 cup natural peanut butter (sweetened is OK, if unsweetened, increase the amt of sugar accordingly)
    1 cup uncooked oats
    2 teaspoon olive oil

Directions:

Add soy milk, cocoa powder and vegan sugar (or substitute) in a small NONSTICK saucepan over low heat, and stir often until sugar dissolves and all ingredients mix nicely.

DO NOT BOIL (soymilk will curdle and that is ICKY my friends!), but make sure it gets very hot. Remove from heat. Add peanut butter and stir into mix until melted.

Stir in oatmeal and oil.

Drop with a greased tablespoon into 16 balls onto a baking sheet lined with wax paper, or sprayed with nonstick spray. Freeze (covered if desired) for a minimum of 4 hours. They are better the next day after you make them.

Yes, you eat these frozen!!!!

About 70 or 80 calories per cookie and about a gram of fiber. You could play with the sweetener to desired sweetness, but I really like it this way. Enjoy!

Serves: 16 Cookies

Preparation time: Fast! No baking!


These turned out pretty well!  I was surprised.  Due to weather conditions, I'm stuck at a house with very little with which to work.  I crushed up some O-shaped cereal instead of using oats, used applesauce instead of oil, no sweetner, and carob powder instead of cocoa.  I only got around ten of them.  How big are they supposed to be?  I'm having trouble letting them freeze cause they're so tasty.

Oh I'm glad you liked them! They are really tasty. Theyve saved me a bunch of times, on Weight Watchers, and now that I've gone vegan! I think you really need the oats... I never tried it with cereal! I used whole oats, and that might have made the difference. I used 16 really small balls, but I'm sure that 10 is OK, too.  Maybe double the recipe so some still come out frozen, and you can still eat a few while making them Smiley I think maybe the crushed cereal might soak up so much moisture that you don't get the full 16?  Adding nuts sounds....well, WONDERFUL!

Hmm... I tried it with oats and a double batch right after I posted the comment, and still came up short.  I didn't add the nuts, but I plan on it next time.  Maybe I'll try some dried fruit too.

The reason might be that you REALLLLLLLLLLLY need the oil instead of applesauce. Its not like baking and being able to switch the two. Its not a lot of oil for all those servings...and your body needs a *little* fat to survive Smiley Try it with that. I'm racking my brain trying to figure out why you're comin up short!

I substituted original ingredients w/ carob and maple syrup and used only 1 tsp. oil. Very fudgey and addictive. I can easily eat the whole batch in one sitting.

These are quite good.  I like them a lot because there isn't much sugar (I used unsweetened peanut butter), which lets the chocolate taste really soar through.  Very easy too!

what if i don't want to use cocoa?  (yes i know you all probably think i'm crazy that i don't like chocolate)  will they be ok if i omit it or should i add something else to thicken it a bit?

I don't like chocolate that much either, I hear you! Maybe you could try it with soy protein powder (possibly vanilla flavored) instead since I know it tastes good even when not baked. First I thought flour but then I realized that the cookies are not baked and it would probably taste nasty with raw flour. I might try this with vanilla soy protein powder and see how it goes.

Come to think of it, the Ingredients list from a handy bottle of Kraft Smooth says "Peanuts (88%), Vegetable Oil, Sugar, Salt" but I've never noticed or tasted the sugar. The peanut butter is soft, sticky in an oily way, & not at all sweet. Is there something I'm missing?

The peanut butter you are referring to would be considered sweetened. Even if it doesn't taste particularly sweet, it contains added sugar, which is what DressingWhatever was referring to. Most "natural" style peanut butters are unsweetened, and the ingredients consist of simply peanuts and salt (and sometimes even the salt is omitted). I hope that helps!

It does. I feel a little bit, uh, blonde about it, but it makes sense. I've just never noticed sugar as a PB ingredient before now.

Yummy. Not like a cookie, more like a soft praline or something. I subbed 1 tbsp of the cocoa with 1 tbsp of vanilla flavored soy protein powder. I didn't go without cocoa at all because I'm not sure there would be a lack of flavor without it, so I went half-half.
They don't freeze solid, just cold, so don't expect them to get crunchy or anything.

These were pretty tasty...  I used dark cocoa powder, chunky PB, and pressed a whole peanut in the middle of each cookie, just for cuteness.  They remind me of these no-bake cookies my mom used to make when I was a kid, however I never would have thought to freeze them.  Thanks for the recipe!   Smiley

OK I made these again, and instead of oatmeal I used Puffed Kamut (although you could sub for any puffed cereal).  I think they were much "fluffier" and it felt like you were getting more cookie!

Great recipe, satisfies my sweet tooth without a lot of fat or sugar.  I've made this with oil, with applesauce subbing for oil, and once without oil or applesauce (I just forgot).  Honestly, I can hardly tell the difference amongst the three.  Certainly it is as good with applesauce as with oil.  However, I do add chocolate chips.
