Microwave Brownies

Ingredients (use vegan versions):

    1 banana, mashed
    3/4 cup sugar
    1/4 cup olive oil
    1 teaspoon vanilla
    1 cup flour
    4 tablespoons cocoa
    1/2 teaspoon salt
    chocolate chips

Directions:

Mix wet ingredients in a bowl...add dry ingredients.... mix everything together well and put in a small microwavable safe dish that's been greased up with cooking spray.

Sprinkle with chocolate chips and microwave on high for 4-5 minutes (depending on how gooey you like em).  Great for late night studying Snacks.  You could probably even add some instant coffee to them before you cook them.  lol

Serves: 4-6?

Preparation time: 10 minutes


Wow, microwave vegan brownies. Thats an amazing concept. These I've got to try, Cant wait to go buy some chocolate chips. Is Olive oil really necessary? I'm thinking any oil would work, and olive oil has quite a strong taste...

I'm new at this vegan thing.  But I understand that it means a diet with no eggs, no dairy, and no meat.  This recipe contains chocolate chips...as I said, I'm new, is there a type of chocolate chips that don't contain dairy?

lancelot, you could always find dairy free chocolate  chips at your local health food store. It should say right on the package.

firstly, what nutrients? Theyre brownies! Also, there has been evidence to suggest that using a microwave preserves some of the  nutrients other conventional cooking methods destroy. And you can get dark chocolate chips that are vegan by default in most supermarkets. If not, just get a bar of dark chocolate, stick it into a bag, wrap the bag in a dishtowel, and bang it with a hammer until its in pieces and use that.

Ghirardelli makes an awesome brand of chocolate chips, the one in the gold bag-- semi-sweet I think.  they're a bit pricey, but they always wow the non-vegans.

Just made them and WOW! Amazing. They tasted less like brownies and more like that Heinz/cadbury tinned chocolate sponge cake with a hint of banana. If you cook them slighly less time, the bottom stays gooey, and you can flip it upside down and it makes a wonderful icing. Truly delicoius. I added white chocolate chips to mine, as well. A lot of places will sell vegan ones as yogurt drops or yogurt covered raisins but will actually not have any dairy or egg in the recipe.

i just made a batch and had a little sample- it tastes great! i don't know if anyone else had this problem but my mixture was really dry and i had to add some chocolate soy milk (1/8 cup) to moisten it up a little.

hehe these brownies were very good...let me tell you what i did....  i had no chocolate chips in the cupboard, so i thought hm...peanut butter could be just as good....  upon further inspection of the recipe and my resources, i decided to be a little bit more innovative and replace the flour with oats....  so i mixed everything up, replacing oats with flour, and adding a bit of vanilla soymilk (because we are out of vanilla too)....then i put everything in a container and plopped a dollop of peanut butter on top....then i put that in the microwave for about a min. and a half, waiting for the pb to soften up so i could spread it out more....after that i popped the thing back in the microwave for another 5 mins. or so....  which i think was a BIT too long because they came out slightly crispy, next time i will make them softer...even if they look a bit wet, don't worry, just let them sit for a sec and they dry out....also i forgot to grease my container, so they stuck and i ended up with lumps instead of squares, but they were perfectly tasty and i will definitely make them again!

Made these yesterday in a round tupperware, sans chocolate chips. The texture is perfectly brownie-like, but you can taste too much of the banana, which ruins the chocolate brownie effect. The flavor of the olive oil came through a bit too much, as well, so I think next time I'll use plain ol veggie oil and see how it goes. Maybe use peanut butter, too? Anyway, all in all, the recipe is pretty decent and the texture is perfect. The flavor just needs some tweaking.

These were fantastic! 10 minutes beginning to end, because I doubled the recipe.(11 minutes if you count the devouring time!) I also added (Wallys) Vegan Chocolate Frosting as I didn't have chocolate chips. Ovens are scarce in China, so this was a great find for us expats!

These were great!!  I read some of the suggestions and alter the recipe a little bit.  I substituted 1/3 of the flour for 1/3 of oats, used stevia instead of sugar and carob powder instead of cocoa, used less than 1/4 cup of olive oil and 1/2 banana instead of a whole.  I also added Soy Slender vanilla milk to the end of the batter because it was dry!!  I have to keep myself from eating the whole thing... They turned out gooey... just the way I like them.  Thanks for the great recipe!!

regarding chocolate chips-there are vegan BRANDS (like Tropical source) and chips that happen to be vegan. If you have allergies I would not suggest them (ones that happen to be vegan). Howe'ver, as previously mentioned there are the Ghirradelli chips. But there are more than one. There are the Semi Sweet and the Double Chocolate. Both contain no milk but may have come in contact with milk because they are in the same factory. Howe'ver, I eat these chips, they are delicious, and they cost less than Tropical Source. I can get mine for $2.69/bag as opposed to Tropical Source being $5.00/bag. Almost half price.  Also, some store brands contain no milk. hersheys cocoa also has a recipe for substituting chocolate  (some powder+ some oil= such and such ounces of chocolate). There are options. You don'thave to go broke buying chocolate chips for brownies.

This recipe is excellent. I usually double the batch and use carob chips/powder instead of cocoa. I also add a bit of ground flax.
These get better with age (at least for a few days, I've never seen them last longer than that), as they adapt a very fudgy texture.

In response to vegetasia's post, here is the formula for making chocolate from cocoa powder: 3 tbsp. of cocoa powder + 1 tbsp. of fat (like Earth Balance or oil, etc.) + 1 tbsp. sugar = 1 ounce of chocolate. It has always worked well for me in recipes, although I only use it if I have no other options. I got this formula from one of Cooking Light's cookbooks in the "substitutions" section.

These are so great!  My whole carnivore family likes them!  I used applesauce instead of banana because I don't like banana flavored anything (although I do like bananas).  I just eyeballed until it was brownie mix consistency and they turned out perfect.  Thank you so much for this recipe!

just made this, used whole wheat flour and substituted applesauce for the oil. also after cooking for 4 minutes I spread my fave peanut butter on top and put it back in for 30 seconds. turned out pretty good for vegan microwave brownies!

"vegan "microwave" and "brownies" might be the most ingenious combination of words in the English language.

I've made them twice now, both times doubling the recipe (and microwaving for 5-6 minutes) and using whole-wheat flour.  Wow-- phenomenal idea, phenomenal dessert.  They're even better the second day, though we usually eat them all before then.

has anyone tried these in an oven? i don't own a microwave and am still searching for a good vegan brownie recipe...mine always come out like chocolate cake.

These were ok. You can definitely taste the banana, but i find it not unpleasant. Nothing made in the microwave ever tastes quite as good as the oven version, and this recipe is no exception. However, it was fast, and the ingredients were handy. My only alterations were to use a thawed frozen banana, a bit of water (dough was far too dry) and canola oil instead of olive.

HOLY CRAP!!! you actually can make brownies in the microwave!!!!! these remind me exactly of those betty crocker microwave cake things i used to eat when i wasnt vegan.  i thought those were the coolest thing cause you added water and the mix magically turned to cake in the microwave... and yep these do the same thing!  just mix it all up and nuke it for 4 minutes... viola! brownies! i seriously thought these werent going to work... but they did!  this totally made my week!

i didnt have any bananas... so i used applesauce... and i used canola oil instead of olive.  i also added some orange extract and zest on the top.  YUMMY! 

this is by far the easiest, best recipe i have ever made in my life!

I'm writing this with a huge bowl of gooey cake brownie in front of me. This was the most perfect quick fix to a chocolate craving!! I used canola instead of olive oil and no chocolate chips. (I did add some chocolate syrup at the last minute.) and also about a quarter cup of cold water because the mix was too dry. This is about as brownie as you're gonna get out of a microwave. Rock on Cheesy

For chocolate chips that are vegan, check a grocery stores own brand (up here its Food Club, Price Chopper). I have found that the semi-sweet chocolate chips are vegan and much cheaper than carob chips
