Peach Cobbler

Ingredients (use vegan versions):

    1/2 cup sugar
    1 cup flour
    1 Tbl. cornstarch
    1 Tbl. sugar
    1/4 teaspoon cinnamon
    1 1/2 teaspoon baking powder
    4 cup sliced peaches (about 6 med.)
    1/2 teaspoon salt
    1 teaspoon lemon juice
    1/2 cup soy milk
    3 Tbl. shortening or substitute

Directions:

Heat oven to 400.  Mix 1/2 cup vegan sugar, the cornstarch and cinnamon in a 2-quart saucepan.  Stir in the peaches and lemon juice.  Cook, stirring constantly, until the mixture thickens and boils.  Boil and stir for one minute.  Pour into an ungreased 2-quart casserole; keep hot in the oven.

Cut shortening into flour, 1 Tbl. vegan sugar, the baking powder and salt until mixture resembles fine crumbs.  Stir in milk.  Drop dough by 6 spoonfuls onto hot peach mixture.

Bake until topping is golden brown - about 25-30 minutes.

For Blueberry - Omit cinnamon. Substitue 4 cups blueberries for peaches.

For Cherry - Substitue 4 cups pitted red tart cherries for peaches and increase vegan sugar in cherry mixture to 1 1/4 cups, cornstarch to 3 Tbl. and substitute 1/4 tsp almond extract for lemon juice.

For Plum - Substitute 4 cups sliced plums (about 14 lg.) for the peaches.  Increase vegan sugar in plum mixture to 3/4 cup cornstarch to 3 Tbl. and cinnamon to 1/2 tsp.


We tried this recipe last week.  My sister in law brought us a bag of fresh Southern Illinois peaches.  We par boiled the peaches for about one minute, then dunked them in cold water.  The skins peeled off easily.  This made an excellent summer time desert.

This recipe was delicious and I couldnt believe how easy and quick it was to prepare.  I actually used nectarines instead because they were on sale, and it turned out great.  I left the peels on and it worked.  My family was surprised that the dough topping could be so good without eggs and real milk.  I had to add about 1/4 cup extra soy milk to the batter, but I think it depends on the brand.

This recipe was fantastic! I made it with fresh peaches and it was by far the best vegan dessert I've ever made. Next time, I'm going to put in more peaches because there was a little too much breading for me; but besides that, it was great. Thanks for the recipe!

Excellent. I too doubled the amount of peaches. Par-broiling the peaches worked well to remove the skins and dunking them immediately into ice water kept them from turning mushy or brown. I also reduced the amount of sugar added to enable the true flavor of the peaches to stand out. My 1st cobbler and everyone enjoyed it! Thanks.

Thanks! Been looking for a cobbler recipe. I usually make my own version of crisp but never made one with actual dough.going to try it tonight. I'm going to use Pumpkin Pie spice instead of only cinnamon-- it is cinnamon, nutmeg, ginger and allspice mixed together. Really great in baked fruit desserts!

I made the blueberry variation last night and used half whole-wheat pastry flour in the topping.  It was really fantastic! The cobbler was tender and not at all dry, not too sweet, it browned and puffed up beautifully - it was really delicious.  I know I'll use this recipe again.

This is the best cobbler recipe I've tried!  Thanks so much for sharing!  I often add strawberries with the blueberries or peaches, which works out great.  Also, strawberry-rhubarb is good (omit the cinnamon and add 1/8 c more sugar).

Concerning the flavor adjustments for blueberries... I see no reason to not use cinnamon, as cinnamon and blueberries pair nicely. But in case you still do not wish to use it, perhaps some grated lemon peel, and maybe up the sugar to counter the tartness? Lemon and blueberry are also wonderful combinations. Maybe even crystallized ginger. Any of these should be wonderful.

Grin This was delicious, as expected. High compliments from my friend who usually *detests* cooked fruit. Yum!! I used the blueberry variation but I kept the cinnamon and doubled the fruit mixture as suggested earlier.. This will be a lovely treat on my lunch break today at work ^_^

Mhmm this was perfect, I had a few, about to go bad, nectarines left over, and I threw them in this cobbler, but I used oil instead of shortening, and added a little nutmeg and brown sugar. I also substituted Almond milk for the soy. I am curious after seeing a few people add oatmeal, how does that change the flavor? I am usually pretty daring to try new things, but I really wanted some homey, goodness tonight.

I had frozen peaches stashed away bought when it was in season. Since they were extremely ripe and moist, I reduced the sugar to less than 1/4 cup and used a lot more cinnamon and nutmeg. I've never made cobblers before, but this was really delicious when warm. If you have some vanilla soy ice-cream, I think the cooked peaches will go perfectly too.

I used brown sugar and added black berries also i used whole wheat flour to make the recipe more healthy. Try sprinkling ground walnuts and icing sugar on top it makes it super pretty
