Banana Oat Cookies (Sugar free)

Ingredients (use vegan versions):

    2 1/2 cups of oats (preferably the quick kind)
    2 tablespoons of flour (I use spelt)
    2 bananas (over-ripe are the best, but others are fine)
    1 teaspoon of corn starch
    2 teaspoons of vanilla extract (I use the cheap imitation, lol)
    Few generous dashes of cinnamon
    Splash of soy or rice milk..(vanilla/chocolate flavored if you want a bit of sweetness)

Directions:

Preheat oven to about 350 degrees F.

Mash the bananas and mix all ingredients in a large bowl.. easy!

Form mix into small balls and flatten.. place on a non-stick cookie sheet a couple centimeters apart. With the amounts in this recipe you'll probably have about half a dozen large cookies.

Place in the oven. They cook rather fast (especially with quick oats) so don't leave in too long.. About 15-20 minutes is usually good, but check to make sure they don't burn.

You can also add carob chips and/or raisins for some extra sweetness; but seriously, these cookies are delicious as is (chewy too).. I made them trying to help me overcome my vegan sugar addiction and they definitely satisfy me! Are especially good with some soy milk or tea.

Preparation time: 25 minutes


These cookies were pretty good. To add a bit more flavor and nutrition, I added 1/2 cup natural peanut butter and rolled the cookies in flaxseed meal before baking, and I omitted the cinnamon. Great for a sweet, healthy snack. Thanks for the recipe!

I thought these were good.  The only problem I had was that they got moldy quickly.  Maybe I made them too thick and undercooked them?  Next time I'll try adding the PB.

These did not turn out well for me. I did use only 2 cups of oats and 1/2 cup spelt flour. Maybe that's why it was dense and floury. Dunno..

Very easy. I blended a lot of my oats to make my cookies less chunky. They did mold very quickly, so I am glad I only made a half a batch. I made them a few times.

One night after I made them, I was at an event where a lady was selling dog treats. One of the treats had listed the ingredient as: oats, bananas, applesauce. and I told the lady I had just made cookie things just like her dog treats! she said, well yours probably had sugar added to them, and I was said, no. And she didn't even believe me. These are definitely sweet enough to go with tea without sugar.

 Couldnt you roll them into small balls and put into the dehydrator.  Sort of, like raw cookies.

I make a similar cookie, but add more banana and don't put soymilk.  Next time I'll try this version.  If you put the finished cookies in the fridge they will not mold.  I keep them for about a week in the fridge with no sign of mold.

These were really yummy. I followed the recipe exactly and added some raisins for some extra sweetness. These have light sweetness to them that's kind of addictive. Thanks for the recipe!:)

I'm eating these right now.... and I think they are about as good a sugar less cookie will be! I had to use old fashion oats it was all I had and put some pumpkin pie spice as well as cinn. They came out really good and are perfect for my 10 month old... I made these rather small and put a little agave nectar on mine I cant wait to try with pb and chocolate chips mmm

I love these. Very satisfying, and easily incorporated into a weight-loss programme I'm doing.

Going to have one tomorrow as breakfast, and I'll try freezing the others to avoid the mould.

There were good!

I halved the recipe and made 8 small cookies.  I used wheat flour, because that's what I had.  I added a handful of chocolate chips, which were good but not necessary.  I also spread some peanut butter on them.  Yummm.

There seem more like granola bars than cookies, but are delicious regardless.
