Easiest Peanut Butter Cookies

Ingredients (use vegan versions):

    1 cup of sugar
    1 cup of peanut butter
    Ener-g egg substitute to equal 1 egg

Directions:

1. Pre-heat oven to 350.

2. Mix ingredients together.

3. Using a spoon round out dough on a  cookie sheet.

4. With fork or two fingers press center of the cookie.

5. Bake for 10-12 minutes.

6. Enjoy!!

My friend rolls her cookies in more vegan sugar before she bakes them.

Serves: 10-12

Preparation time: 5 minutes


how do these turn out?  Flat?  Puffy?  Chewy? Crunchy?  Sounds different!  Though I DO LOVE peanut butter!

I baked these for 10 minutes, and they came out so soft that I couldnt take them off the cookie sheet.  I put them back in for a few minutes, and they were still too soft.  Howe'ver, I left the next batch in the oven for a good twenty minutes (maybe a bit more) and they were perfect!  I pulled them out when I saw them browning just a bit on the edges, left them on the cookie sheet for 5 minutes, and then put them on the cooling rack.  Yum!

These completely didn't work for me - came out more like taffy than cookies, unfortunately.

Aren't you missing flour?
This doesn't seem like it would lend itself to a cookie consistency, more like taffy as the above poster said.

I added flour, they came out a little crumbly and soft. I cooked them an extra eight minutes and still doughy. The smell is awful but that's just because we're not using very good peanut butter (always go organic, blar, cheap stuff is awful).

This is from my mate because I haven't tried them yet: "I LIKE THEM."

This is actually the same recipe as another on this site. We love 'em here. I make them with some regularity with peanut butter, cashew butter, almond butter, or a combination of cashew and almond. They don't need the flour at all. So easy and I usually have the ingredients on hand. I cook them for 20 minutes and I've never had a bad one although they don't always turn out the same.

sounds really simple and yummy...but im a little uneasy about the cup of sugar, since I try not to eat sugar at all...could I sub in something else and have it still be just as delicious?

Oh my freakin goodness these were sooooooooooo good!!!  I had a huge peanut butter craving today and had to make cookies and this looked like an awesome recipe - and it was!  I just used 'American Style' extra crunchy peanut butter as I didn't have my usual natural organic peanut butter on hand (was at an omni friend's) and they still came out so great!  (I have even posted pictures to prove it!!!)  The only thing is, if you use normal peanut butter and not natural peanut butter, it is veeeeerrrrry sweet with all the sugar in the recipe, so you might want to cut back a bit, but if you're anything like me, the more sugar the better!  Oh and also you will need to cook them for about 15-20 mins or they will just fall apart when you try to take them off the tray as the insides are too soft. 

And being the total disgusting pig that I am - I ate 3 of them straight off the pan and burnt my freakin mouth.  PIG!!! Roll Eyes  I have since learnt that is best to let them cool for a bit as they firm up heaps when they cool down - AND THEY DON'T BURN YOUR MOUTH THEN!  (Note - I am blonde, its a good excuse to act like an idiot) 

Honestly, I do not have words to describe how great these are considering how quick and easy they are to make.  FA-BU-LOUS!  Thank you very much for posting this recipe  Smitten
