Who Knew It Was Vegan Pumpkin Cookies

Ingredients (use vegan versions):

    2 cup brown sugar, firmly packed
    2 teaspoon vanilla
    2 cup canned pumpkin
    2 teaspoon baking soda
    1 cup vegetable oil
    2 teaspoon baking powder
    1 teaspoon each - cinnamon & nutmeg
    1 cup chopped nuts
    1/2 teaspoon ginger
    1 1/2 cup raisins (optional)
    4 cup all-purpose flour

Directions:

Beat vegan sugar, pumpkin, oil and vanilla.

Sift together dry ingredients. Stir into the pumpkin mixture until smooth.

Blend in raisins and nuts.

Drop by spoonfuls or oiled baking sheet, and bake at 350°F for 12-15 minutes.

Serves: 5-6 dozen

Preparation time: 30 minutes


I skipped the nuts & rasins(personal prefrence) and added a cream cheese frosting. They are wonderful. yumm! I love this recipe, it makes a lot of cookies too!

These cookies are amazing! They turned out more cake-like than a traditional cookie, but that's a good thing in my opinion! They were moist, soft, and sweet, with just enough spice and pumpkin flavor without being overpowering.  Everyone who tried these cookies raved about them!  I made a few with raisins, which were good, but I'll probably skip them in the future. I also skipped the nuts.  Next time I make these I will use far less cooking oil (the batter really didn't need a whole cup) and add a little more pumpkin instead to cut some calories.  Great recipe!!

I loved the cookies, I made them with 1/2 all purpose flour and 1/2 freshly ground whole wheat flour.  Added more fiber and a great wholesome taste.

This recipe is yummy! I don't think we have canned pumpkin in New Zealand (I've never seen it anyway!) so I just used boiled, mashed pumpkin and also skipped the nuts and raisins etc. I also used only half the oil and a mix of white and wholeheat flour. Despite all this mucking around they still came up great! Smiley

hi kiri, i recognised the tiki!  I'm also from New Zealand.  So nice to hear of somebody using real pumpkin!  Our New Zealand cooking habits are so different from the US.  I don't think we use so much processed food, or maybe I am just judging everything by my own eating habits, who knows?  Anyway, it's the first time I've seen anything remotely New Zealand-ish on this site and so I wanted to comment.

these are pretty good! not too sweet and they are definitely cakey.  they are super easy to make, and a nice change from the ordinary.

i omitted the raisins and only added half a cup of nuts (i used pecans) and these are very good. puffy, cakey cookies that taste excellent. this recipe sure makes a lot, so i brought some home to the omni family who devoured them. this recipe is a keeper

Wow.... suprisingly good!   I was out of brown sugar so I used normal.   I also halved the recipe.  I used only 1/3 of a cup of oil and used coconut oil.   I didn't have any nuts, but I will DEFINITELY use them next time, needs a little something.   I used way more spices than asked for and it turned out great.

Hehe I haven't made this recipe, I just found it but I had to comment because I possibly wouldn't have noticed it had it not said "photo by Kiri".  I thought "What?!  I didn't make these...".  Being from England I don't know any other Kiris so I wanted to comment.  Having now said all this, from the picture (and recipe) these cookies look DELICIOUS and I will be making these as soon as possible!

I just made these for a vegan potluck and I have to say, they are DELICIOUS!!!  My whole apartment smells wonderful, =)  I also omitted the nuts and the raisins.  I love the cakey texture of these cookies!

I omitted the raisins & chopped up some pecans & these are very tasty but the texture to me is more like a muffin, so next time I'm going to put the batter in muffin tins & see how they turn out.

These are fabulous! I left out the nuts, and used whole wheat flour. My family loved them and so did my Yoga Teacher's class! They are CRAZY Cheesy good! Thanks for sharing!

Other reviewers said these were cakey so I almost passed them up since I'm not a big fan of cakey cookies but I decided to try them anyway and they were pretty good.  The kids liked them, too.

I sprayed the cookie sheet with non-stick cooking spray and spooned the first batch onto the cookie sheet.  They pretty much kept the same shape throughout the baking process so if you want them to flatten out some, you'll want to press the dough down with your fingers a little bit.  Otherwise, they'll look like little pumpkin cake balls, tastey little pumpkin cake balls, though.  Smiley

These cookies are SOOOOO good! For sugar I used sucanat and I used less of it...not sure how much. I added 1/4 tsp of allspice, used half spelt flour and half white flour and omitted the nuts and raisins. I really wish I would have put the raisins in though! The second time I made this recipe I made them into muffins with the raisins added, they turned out awesome!

these cookies came out great! i listened to the reviews though and only used half a cup of oil, they still came out really moist and chewy! i left out the nuts and added CRAISINS (dried cranberries) it was just what they needed! i pressed them down with a fork to make them more cookie shaped and sprinkled a little sugar on top. i brought them to a superbowl party for all my omnivorous friends and they loved them! BRAVO for a lovely cookie recipe <3

i just signed up to be a user so i could review these!

moist cookies, definitely a bit muffin-like as others have described--just the way i like them! i followed the recipe exactly except for cutting the nuts and raisins and adding 1-1/2 cups chocolate chips.  next time i think i'll use less oil cos it sure seems like a lot.  i didn't reduce the recipe and it made a LOT of cookies! i'm excited to share them with my class tomorrow and then to pass some onto my boyfriend and his mom this weekend. i'm super proud of the results andi can't wait to tell everyone they're vegan! i love pumpkin bread and pumpkin muffins and enjoyed these more than anything i've ever bought pre-made  Wink.

could someone share a cream cheese type icing recipe with us?
