Annas Amazing Vegan Chocolate Oatmeal Cookies

Ingredients (use vegan versions):

    1 cup butter/vegan margarine (room temperature)
    3/4 cup sugar
    3/4 cup brown sugar
    1 1/2 teaspoon vanilla
    2 cup flour
    1 teaspoon baking soda
    1/2 teaspoon salt
    1-2 teaspoon cinnamon
    1/2 cup oatmeal
    1 cup pecans (or nuts of choice)
    1 1/2 cup vegan chocolate chips (tropical source works great!)

Directions:

Preheat oven to 365.  Beat vegan butter, vegan sugars, and vanilla until nice and creamy.  Mix flour, baking soda, salt, cinnamon and oatmeal in a separate bowl.  Slowly add to butter mixture.  If mixture is too dry, add some soymilk.  Stir in the pecans and chocolate chips.  Spoon onto lightly oiled cookie sheets, keeping each cookie about 3 apart.  Bake for 7-12 minutes, or until lightly golden.  Let cool on sheets for 2 minutes, then transfer to cooling rack or counter top.  Enjoy!

Serves: 3 dozen

Preparation time: 20 minutes


these were excellent, thank you for the recipie!  I added about 1/3 cup of soymilk and 1/4 cup of oatmeal to the recipie and they were just as good.

these cookies were great but too sweet so i removed half the amount of both types of sugar.

These are great but aren't really oatmeal cookys much because they haven't a lot of oatmeal in them! I recommend up to 1/2 cup more oatmeal, although I prefer the use of spelt flakes because they are much tastier than bland oats.

I made these about a week ago with vegan dark chocolate (70% cocoa) chunks, walnuts, 1/2 cup less sugar, some added vanilla soymilk, and 1/4 cup more oatmeal. They were gone in two days. My roommates loved them!

this is a fantastic recipe and it's so great to see everyone modifying it to make it there own.  I used 1/2 cup of each sugar... 3/4 cup oatmeal.  1 cup white flour and 1 cup whole wheat, Green and Black's Organic Dark Chocolate chopped.  1/2 tsp of cinnamon, dash of allspice and ginger.  I also used only 1/2 cup vegan margarine and replaced the other 1/2 cup with applesauce... yummy!!!  Everything else was as written.

These cookies are soooo yummy!

I added:
 
A handful of chopped dates
A handful of pumpkin seeds
1/5 cup of maple syrup
1 cup of oatmeal (not enuf in there)

DELICIOUS!!

These cookies turned out wonderful. I was a bit worried about how they would turn out at first, but I was elated when I pulled them out of the oven. I did cut the sugar in half as others suggested and they were plenty sweet. I also subbed dates for the chocolate and added an extra 1 cup of oats. They cookies came out sweet buttery and oaty! Great recipie, I will be passing it along to much of my family!

I made these last night and they're delicious! Grin  (Even my picky little brother liked them and he's been loathe to try anything I make since I became vegan.) There was a nice big pile of them on a plate on the counter when I went to bed last night, but when I got up this morning most of them were gone  Shocked (Guess everyone liked them...) Thanks so much!

Finally I've managed to make a decent cookie! For whatever reason I cannot make Bloody Finger Cookies. It has become a mini-obsession of mine. However, these were super easy to make and tasted great!

Yum Yum and Yum!

I baked them for 7 min because i enjoy the extra soft/chewy cookies and then I replaced the chips for raisins.

Later I ended up making a vegan oatmeal raisin chipwich (or raisinwich in this case) with soy ice cream.

Maaayuun these are yummy.
I added stuff, I used about 3/4 cup of dried strawberries, 2 handfulls of cocolatechips, coconut and walnuts.

Wooo, good treat. :]

 Thumbs Up Them was the chronic! Had no chocolate chips so we used an orange chocolate bar (chopped) and some mint truffle kisses!! And they were great! Did need to add 2 or 3 Tbsps of soymilk...  Thanks Anna! Extra Cool
