Brownies

Ingredients (use vegan versions):

    2 cups flour (I use enriched and whole wheat)
    1 cup water
    1 cup brown sugar
    1 cup sugar
    1 teaspoon salt
    1 teaspoon vanilla extract
    3/4 cup baking cocoa
    1/2 cup oil - preferably vegetable oil
    1/2 teaspoon baking powder
    1/2 cup chopped nuts (optional)
    1/2 cup vegan chocolate chips (optional)

Directions:

1. Boil water and 1/2 cup of the flour over low heat, stirring constantly, until it reaches the consistency of a thin gluey paste. Remove from heat and let cool completely.

2. Mix vegan sugar, salt, vanilla, cocoa and oil. Then add the rest flour-water mixture. Mix well.

3. Add the remaining 1 1/2 cups of flour, baking powder and the nuts or chocolate chips, if you choose to add those.

4. Spread mixture into a greased 11 x 7 pan. Bake at 350 for 25 minutes, or until a knife can be inserted and come out clean.

This was a really easy, and really tasty recipe. I gave some to my friends and they fell in love with them. They keep asking me to make more. I thought of maybe putting some chocolate frosting on them, but they were perfect without it. Enjoy.


I have had trouble making vegan brownies in the past - especially at high altitude. I would venture to say these probably turned out the best out of all that I have tried. I have had better brownies in the past as far and flavor and richness go, but these held their shape (instead of turning in goo as many others I have tried from vegweb have), and still had good flavor.  The texture was much like a cakey cookie, if that makes any sense. The batter was more like a dough - it was difficult to stir all the flour in - very unlike a typical fluid brownie batter, and much more like a cookie dough.  I was a little uneasy about the cooking of the flour/water mixture. It made something similar to a roux, and seemed to go okay, but I'm not sure it was necessary. There were a few remaining hard lumps in the final product that I attribute to this.  I used 1/2 cup of whole wheat flour and the rest white flour, and this seemed to work fine. I may even up the ratio of whole wheat flour next time.  Next time, I think I will try making these without cooking the flour and water together and see what happens. I may also try using this recipe for drop cookies instead of spreading them in the pan.  Overall, good.

Wonderful! I used carob instead of cocoa and i added carob chips...the carob chips made it!  I topped it with a little frosting (something like a cream cheese frosting)  that was a very nice touch!

Yum, yum, yum.  After 48 hours of hard work fixing up our house, I rewarded everyone with a big pan full of hot, fresh brownies... these were perfect!  I've failed every attempt to make vegan brownies before, but these came out perfect.  Just the right combination of gooey and cakey.  Next time, I will definitely add some chocolate chips.  I had no trouble with the pre-cooked flour/water mix, even though I was afraid I'd gotten impatient and taken it off the heat too soon.  Smiley  Thanks for the recipe!  ....cream cheese like frosting would be splended!!!

YUM! I cut the recipe in half and put it in a 9x9 and it came out great. Also, I forgot to let the flour/water mixture cool and they still came out deliciously. Like real brownies!

I've been waiting for about a year to try this recipe.  Now I don't know how I could ever live without it.  They were so good and turned out perfect.  Lots of V-brownie recipes are too sludgy or too oily.  These ones taste just like the real thing.  I used half whole wheat flour and half white, too.  Still good.  Thanks, I'll be using this recipe often.

Chocolaty goodness of yummy gooey magic!!!
I used whole wheat flour (*gasp*) and they still came out gooey and moist; not gritty like I was expecting. 5 stars. I made them for fathers day, and nonone knew they were vegan until the end.

Wow, these are sooo delicious!  They're just like the real thing and have the perfect amount of gooey-ness.  I've made two batches within the past week and my non-vegan family keeps eating them all.  Too good.

Amazing!!  Easy to make and came out perfectly chewy and chocolaty.  I brought them to a potluck and folks went nuts for them.  I sprinkled some carob chips on top and they melted nicely.  Awesome recipe!!

This is the best brownie recipe I've ever made, vegan or not. I was weirded out about boiling the flour and water, but now I think that it's what keeps them so moist. I did find that they needed to be in the oven for a while, but it was TOTALLY worth it!

Chocolaty deliciousness!  I usually use another recipe for brownies, but I was out of margarine.  I found this recipe and decided to give it a whirl.  I used half whole wheat and half all-purpose unbleached flour.  I didn't use any nuts, but I did use the optional chocolate chips.  I baked this in a square glass 8" dish, so my brownies were a little thicker.  I wound up baking the brownies for 30 minutes at a smidge under 350 F, but I think I could have went 5 minutes longer (it's so hard to tell when brownies are done, and I always find it's better to err on the side of underdone, rather than overdone with brownies).  I, too, was a little wary of cooking the flour/water mixture, but it all turned out fine in the end (although I'd say it was more the consistency of a fairly thick bechamel sauce than a thin gluey paste as the recipe states).  I'll definitely be making this recipe again; as a matter of fact, I think this recipe is going to replace my old brownie recipe.

Add the flour to the water beore it is heated. Then slowly heat the mixture while stirring. This prevents the lumps.
These brownies were the tops. My non vegan family loves them and so do I. They look and taste great.

THANK YOU! after many failed attempts at other vegan brownies, this one did it! Amazing.. moist-non gooey-rich and just like regular brownies.  Just wonderful. Covered with a regular cream cheese icing even though it doesn't need it. Thanks again!

pretty good brownies; fluffy, not very rich or dense.  the flour-water part was thicker than I expected.  I'd like to try something that calls for chocolate soymilk or melted chocolate to get a richer brownie, but this definitely satisfied everybody's chocolate craving and the batter was delicious.  (a 9x9 pan for 25 minutes worked well for me.)

fantastic recipe! i love that it can be made using common pantry ingredients, you don't even need soy milk. i even made this with gluten free flour, cos my housemate can't have gluten and they turned out great.
