Apple Deeeelite

Ingredients (use vegan versions):

    1 large apple, cut in half and cored
    1 tablespoon margarine
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    2 tablespoon wheat germ or oats
    1 tablespoon fig preserves (other preserves would work- fig is best)
    1 tablespoon raw sugar
    1/4 cup soy milk, optional

Directions:

Preheat oven to 400F. Cut apple in half and remove core. In a separate bowl, combine the wheat germ (or oats), margarine, spices, preserves and sugar.  Fill the holes in each apple half with the mixture. Wrap in aluminum foil and cook in oven for 25-30 minutes, until soft.  Serve in a bowl, drizzled with the soymilk if desired. YUM! Great for a quick sweet fix.

Serves: 2

Preparation time: 35 minutes

I didn't have fig preserves, or margarine, so I just used some other preserves and peanut butter. It was deeeelicious.

This is a great recipe! I have a very picky partner so I did not use any jam. I subbed fresh cranberries and a little soy milk in the mix instead of jam. I also used oats instead of wheat germ and omitted the nutmeg cause I forgot it. It turned out great but I would suggest putting the foiled wrapped apples on a cookie sheet cause mine dripped a lot. The drippings burned onto the bottom of my oven and my kitchen filled with smoke, which was not so great lol. Thanks for the recipe!
