Cherry Cobbler

Ingredients (use vegan versions):

    1 cup turbinado sugar
    1 cup any soy/rice or almond milk
    1 cup flour
    1 can cherry (or any fruit) vegan pie filling

Directions:

Mix all ingredients together except pie filling in a bowl and blend together.  Pour mixture into a oiled baking pan.  Mix in can of cherry pie filling. Bake at 350 degrees until top is golden brown usually about 30-45 minutes!

Serves: 8

Preparation time: 10 minutes


This did not work for me at all.  It never cooked.

I made this tonight, I don't know what turbinado sugar is, but I am out of white sugar, so I used 1/3 cup sucanat, 1/3 cup brown sugar, and 1/3 cup agave nectar.
After 30 minutes the outside was cooked but not the middle, but I think the middle was the best part!
This is deff. yummy!

I don't know what turbinado sugar is

Turbinado sugar is made by crushing freshly cut sugar cane, a squeezing out the juice and spinning it in a turbine.  It's characteristics are large sparkly golden crystals and it is rich in molasses, vitamins and minerals, which gives it a distinctive flavor.  Basically it's just fancy flavorful somewhat good for you sugar  Wink

I'm sure subbing any other type of crystalline sugar would work just as well for this recipe.

I wonder if the recipe's author was using self rising flour?  If not I would try adding a bit of baking soda.

Ah, thanks gratefulbeauty, I will try this with turbinado sugar and a bit of baking soda next time.
