Nutty Buddy Protein BallsIngredients (use vegan versions): 1 cup peanut butter or soy nut butter (depending on what you have or allergies)
1/2 cup nonfat dry soy milk powder
1/2 cup raisins
1/4 cup maple syrup, agave nectar or molasses (depending on what you have)
1/4 cup dried coconut sugar cookie crumbs, sunflower seeds, granola, mashed cereal or almond bits (depending on your tastes and what you have on hand)
Directions:In a bowl mix up all the ingredients except the last ingredient (your choice coating). Shape mixture into 1 inch balls. Roll each ball into your coating of choice (last ingredient) and let them chill in the refrigerator until they become solid.
Serves: as many as you can roll out
Preparation time: 10 minutes to make and howe'ver long you want them to chill

Yum yum yum! I used the coconut, currents in place of raisins, and added a little granola for crunch, and they were delicious. Small, not overly sweet, and substantial for a snack. I spent the entire next day wishing I was at home on the couch eating nutty buddys.

These are wonderful. I made them for a picnic and they were a hit! I made two batches, one rolled in coconut, and another that I dipped half in vegan chocolate then rolled in coconut. Everyone said they tasted just like peanut butter cups! Thanks so much.

i made these, and they were awesome! i bought a granola cereal that had in it already shredded coconut and nuts. then i mixed it with sunflower seeds and then i used that to roll the balls in. it had a great flavor a crunch. i love these!

Absolutely scrumptious!! I rolled the balls in sunflower seed kernels. Then I froze them in the freezer. I arranged them on a plate, and sprinkled coconut as a garnish. They were absolutely YUMMY.

These were delicious. My batch made 22 balls, I used shredded walnut as my topping. Tasty and versatile. A keeper.
