Goddess Bars

Ingredients (use vegan versions):

    Base Layer:
    3/4 to 1 cup graham crumbs
    1/4 cup quick oats
    1/3 cup + 1 tablespoon melted (or just very soft) vegan margarine
    2-3 tablespoon soy or rice milk
    2-3 tablespoon liquid sweetener (e.g., maple syrup)
   
    Middle Layer:
    3/4 cup wheat squares cereal (e.g., Shreddies)
    3/4 cup raspberry jam
    3/4 cup peanut butter
   
    Top Layer:
    1 1/2 cups carob chips (or non-dairy chocolate; most dark is N/D)

Directions:

These are hugely tasty; its amazing what you can come up with on a dull Sunday afternoon!

Preheat oven to 375 deg.

Using a fork, blend the soy butter with the graham crumbs and quick oats.  Blend in the soy/rice milk and liquid sweetener, beginning with the smaller amount and adding more until the batter holds together.  Spread the batter in a square 8 x 8 pan and bake 12-15 minutes.

Mix together the ingredients for the middle layer and spread over top of baked base layer.  Bake for another 5 minutes.

In a double boiler (or in the microwave), melt the carob chips.  Personally, I use non-dairy, dark chocolate.  Once melted, spread over baked middle layer and let set in the fridge for a few hours.  When chilled, cut into bars and try not to devour them all at once!!

Serves: 12 Bars

Preparation time: 20 min.


These are indeed delicious! one thing i discovered - i used unsweetened carob chips the first time i made these, and they crumbled and looked like dirt instead of melting in the double boiler. i added a couple of drops of soy milk and that softened them right up (these are so decadent, they really don't need sweetened carob chips).

these were absolutely wonderful!  ive made the recipe several times, altering little things here and there, and they have never failed.  i personally like a little more of the shredded wheat in mine, but there really isn't anything you could do to these to make them less tasty!

These are delicious bars! (They certainly fixed my peanut butter craving.) I used my favorite unroasted & unsalted trail mix in placed of the shredded wheat...they turned out so well! The dried fruit in the trail mix really gave these bars a satisfying texture. Smirk

Any suggestions on replacing the soy butter?  I can't find any soy butter or vegan margarine where I live.  Otherwise, these sound delicious and I'd love to try them.

For midori: you could try with some nut butter such as peanut butter, tahini etc.  You could also try with some neutral oil (no taste). It won't be exactly se same but it should work.

Oh this is sooo good but me being who I am... I never go right off the recipe... so I felt the need to embellish.  I loath peanut butter so I upped the Jam to 1 cup and added a 1/2 cup off nutella (probably not the most vegan friendly but tasty).  I also just popped 1/2 a cup of carob chocolate chips on top for the final baking and the melted right into the berry goodness on top.  These are wonderful!   Smiley

yummy! i changed it tho!

mashed banana instead of jam
sweetened shredded coconut instead of shredded wheat
equal parts graham cracker and oats
coconut oil + 1/4 tsp. salt instead of soy marg.
added a little maple and rice milk to the carob chips to help them melt

that's it.. they really are just minor changes Wink.. but these are really good none the less.. thanks!

This is my new favorite dessert!  It combines all my favorite flavors in a delicious mouthful.  There's no need to make anything else.  We couldn't even let them chill for long enough, we devoured a bunch of them as soon as they were cool enough to eat.

I subbed 1/4 cup of graham crumbs for ground almonds and used agave nectar to sweeten.  Instead of the cereal (we never have cereal on hand) I used roughly chopped pecans.  (I think this caused it to be a bit more mushy in the middle than if I used the cereal.) I used about half peanut butter, half almond butter and mashed bananas instead of jam.  I used only 3/4 cup of dark chocolate chips for the topping, and sprinkled it all with the leftover pecan and almond dust.  YUMMY!!  And I just love that I didn't have to use much sweetener besides the nectar and sugar in the chocolate.  This is just a fantastically yummy, sweet craving-satisfying treat!

Next time, I'll copy oktokrewl and use some shredded coconut along with pecans in the middle, as I know that would firm up the consistency in the middle more and totally complement the flavors.

I followed the recipe exactly except for 2 things:  I had to use a graham cracker pie crust because I couldn't find vegan graham crackers and I used strawberry preserves... turned out very good! Next time I will use dark chocolate chips... I didn't like the taste of the carob chips, it was my first time using them. Thank you I will be making this again Smiley

I added coconut to the base layer, and I only had instant apple cinnamon oatmeal, and i used black cherry jam, and bakers semi sweet chocolate (vegan!) topped with shredded coconut and almond slices! Yummie!

Dangerously good.  I ate almost half right away! 

I used a graham cracker crust pie, so I really made Goddess "Pie" rather than "Bars".  I used mango jam instead of raspberry.  I broke an orange-flavored dark chocolate bar into pieces and placed them on top of my pie.  Then placed it in the oven for a few minutes to melt the chocolate.

Mmm,
these sounded REALLY good.

So, I went out and bought all the stuff to make it. Overall it cost me about $14 to make.
I used a Graham cracker crust, raspberry preserves, creamy peanut butter, 100% Whole wheat squares, and (vegan) semi-sweet chocolate chips.

Honestly, it wasn't as good as I thought it would be...I'll admit, I was disappointed.   Undecided
It was a nice treat, a bit too decadent for my taste. I'll make it again but next time I'll use 1/2 cup of cashew butter, 1/2 cup of sugar-free raspberry preserves, and only use 1 cup of chocolate chips.

One thing I really did like about this recipe was the texture the wheat squares gave to it. Yummy. Smiley
