Apple Crisp

Ingredients (use vegan versions):

6 to 8 good cooking apples or 4-5 cups, cubed (tart ones better)
    1/4 cup water
    1 teaspoon cinnamon
    1/2 teaspoon salt
    1 cup brown sugar
    3/4 cup flour
    1/3 cup margarine
    rolled oats (optional)

Directions:

Peel, core and cube the apples (enough to cover bottom of 9 x 13 baking dish to a pie height).  pour water over top.  Sprinkle with cinnamon and salt (to taste).

Blend cold margarine, flour and vegan sugar with a pastry blender or fork, until crumbly (add some rolled oats if desired).  Spread mixture evenly on top.

Bake in preheated 350 degree oven for 40 minutes.

Serves: 6 to 8

Preparation time: 20 min

If you're new to cooking with apples like me, make sure to actually use the at least 6 apples.  I only used 5 because it looked like too much in the pan, and once they cooked down my layer of apples was as thick as the crumb topping!  Still very tasty, though Smiley

Well, I really messed this up. Instead of reading directions, I just threw everything together and shoved this into the oven. I was so bummed when I realized what I'd done. But, even though I made the mistake of jumping the gun, I didn't want anything to go to waste. *So* after the initial bake time was over, I squished down the baked apple and ingredients, covered, and baked again for 15 more minutes. The final product was delicious! My prana belly is still smiling.

I used A LOT more Veg  butter and even smeared some on top of the crust. I also used oats(a must),almonds in the apples with a lot of cinnamon and walnuts in the crust.Turned out AMAZING.
