Super Yummy Low-Fat Whole Wheat Oatmeal Raisin Cookie

Ingredients (use vegan versions):
 
    1/4 teaspoon of salt (optional)
    1/2 teaspoon of ground cinnamon
    1/2 teaspoon of baking soda
    3/4 cup of whole wheat flour
    3/4 cup of dry oats
    2 tablespoons olive oil or 1 tablespoon oil + 1 tablespoon of soy milk
    1/3 - 1/2 cup of sugar or artificial sweetener
    1/4 cup of unsweetened applesauce
    egg substitute equivalent of 1 egg
    3/4 teaspoon of vanilla essence
    1/4 cup raisins
    1/4 cup of nuts or seeds (optional)
 
Directions:

Preheat oven to 350F.  Prepare a cookie sheet either with non-stick spray or a parchment paper.

Sift the salt, cinnamon, baking soda into the flour and oatmeal in a bowl.  Stir to blend together.

In a mixing bowl, beat olive oil (and/or milk) together with the vegan sugar.  Add in applesauce and egg substitute and beat well. 

Add in the flour mixture and beat on medium until a semi-stiff dough forms.  This dough will be very slightly sticky.  At this point, add the vanilla essence, raisins and nuts (if you are using) and mix well into the dough.  This step will require a little more strength because the dough is pretty stiff due to the whole wheat flour.  But just try to incorporate the raisins into the dough.

Drop by tablespoonful about 3 to a row.  Flatten to about 3/4.  Just keep in mind that this dough will barely flatten out when its baking so what you see is what you get.  Just don't flatten it too thin that it will turn out to be crunchy like a biscuit instead of crispy on the outside and chewy on the inside.  You will probably get about 15 to a standard 9x13 cookie tray.  Bake in the center of oven for about 10-12 minutes.  When its done, remove from cookie tray and cool on a rack.  It is very good just out of the oven and still slightly warm!

Note:

1) I used 1/3 cup of sweetener and find it just right.  But I do not like sweet stuff too much so for most folks, you will probably want to try about 1/2 cup - 3/4 cup of sweetener.

2) The finished cookie will look uncooked on the inside but that's because of the color of the whole wheat flour together with the applesauce, so don't be afraid to take a bite.  Its pretty good for a low calorie cookie.

Each cookie is about 80 kcal if using 1/2 cup vegan sugar, no nuts/seeds and contains about 1.5g of fat (that is if my calculations are accurate).

Serves: 18

Preparation time: 45 minutes


Despite my initial doubts, this cookie actually came out alright. I used Brown rice flour instead since I didn't have whole wheat and i didn't add raisins because I don't like them in my cookies. Howe'ver, the name of this cookie suggests that something was left out, i.e. oatmeal? Just curious. Theyre not the best cookie I've ever had and are a little dry but all in all worth it for such a healthy cookie.

I've been using this recipe for a while now, I love it! Excellent cookies! I add a bit more sugar to my recipe, about 1 cup.  I have added other things to it as well such as vegan chocolate chips. yum! But you can't go wrong with walnuts and raisins. Very healthy and everyone loves them (even my non-vegan family and friends!) P.S. There are oats in the recipe, hence the name oatmeal cookies.

These cookies were delicious!!  Howe'ver, if I hadn't pulled out all the ingredients I would have forgotten to add the oatmeal.  The instructions leave out when to actually add it.  I had put 3 cookies on a cookie sheet before I realized I forgot to add something!

I loved this cookie -  and its so healthy! i don't even have to think about it as a cookie. i was thinking about trying to make it a granola bar also, ill tell you what the results are. I also plan to share this with my non-vegan friends on weight watchers. i made it with 1 T oil and 1/3 cup sugar and pumpkin seeds

These are so great - and they have a very pleasant texture, unlike some other vegan cookies.  I only used 1/3 cup of sugar and they were plenty sweet for me (and I have a notorious sweet tooth).  The recipe made 12 cookies, and less than a day later only 1 is left.  Were making more tonight!

I just took these cookies to my toddlers egg hunt party and they were devoured!  Moms and kids both loved them!  The recipe is a little confusing because of the order the ingredients are listed in.  I've rearranged it in Word and printed out a copy so its easier to follow.  But if you get all your items out, then follow basic cookie making procedure; put your dry stuff in 1 bowl, mix the wet in another, then put them together.  They are worth putting on the top of my cookie recipe pile! (Note from admin: The order of ingredients has been corrected.)

Pretty good cookie recipe. I used only 1/3 c. brown sugar, 2 tbsp of rice milk instead of the oil, and alot of raisins.  They turned out pretty good, but not like amazing   I'll make them again when my family and I have a craving for oatmeal cookies though.

These cookies were great, I used 1 tablespoon of milk and 3 tablespoons of ground flaxseed instead of oil and they turned out great! They were a little too good I think, I ate them all in less the 24 hours Shocked

now, my VERY FIRST cookies ever. and they turned out wonderfully. ^^;
next time I am going to add some chopped prunes just to make it different. didn't use any nuts though, and didn't miss it. oh, and some vinegar or lemon juice, so that I don't feel a slight taste of it. sugar really was too much. 1/4 cup would be fine.
as for the calories. it was 167cal per 100g so if my cookies turned out to be 30g, this means that there was 50 cal per cookie. nice.  Wink

Great recipe! Almost every vegan oatmeal raisin cookie that I have tried until now has been either way too crisp or too hard to chew. These had a texture similar to the pepperidge farms ones that i used to enjoy before going vegan... soft and chewy like they should be. I didn't have whole wheat flour, so i used 1/2 cup wh. wheat pastry flour and 1/4 cup all purpose flour. i also had to cook for an extra 5 minutes maybe becuase of the size. the recipe says that it makes about 15 cookies, but i only got nine from it (guess i like my cookies on the large side). the taste is also excellent.

Don't apologise because there may be a few people who wanted to know! Smiley  Yes there is a difference! The thing is that extract is actually taken straight from a vanilla pod, and the essence is just a bunch of chemicals (with maybe a tiny bit of extract) + a lot cheaper! (the real stuff's priceey) hope this helps!

i was pleasantly surprised by these. for being on the healthier side they were great. i used 1/2c whole wheat flour and 1/4c all-purpose and didn't add any nuts. i did the 1 tbsp oil/1 tbsp soymilk combo. the cookies did spread out quite a bit while baking, but it wasn't really a problem. oh, i also upped the sugar to 3/4c (maybe a little more). the texture was good too, just the right amount of chewiness, like others mentioned. they actually smelled even better than they tasted.

These were delicious!  I used part whole wheat part all-purpose flour because I was low on the former.  I also used just soy milk no oil, only 1/4 cup sugar and added chopped prunes for extra fiber and potassium.  They turned out soft, chewy, and tasty.

They look delicious and  i just popped them out of the oven! I cooked them for 14 minutes and they didn't really brown but they look moist and very chewwy. Instead of the oil i added to the applesauce and I used 4 of those tenny boxes of raisins which are like 1/2 oz; I didn't add nuts and i used 1/3 cup sugar they were a little sweet but oh well i should have listened to the others. I also used the vanilla extract idk i really wanted to make them yah know idk if there is a difference. i made ten cookies so they were each 106 calories very good for a cookie as far as i know. I liked this recipe it is healthy and has iron and whole grains and i don't consider it a cookie because i don't like cookies generally.

I love these.  I'm still trying to figure out how to make them a little firmer, but for being so lowfat...I have no complaints!  They're great...so far I've made oatmeal raisin and trail mix versions.

This is so good - deceptively so, since it is so low in fat! I did what another reviewer did and subbed ground flax seed for the oil. I also added 1/2 tsp nutmeg and 1/4 tsp of ground cloves. Next time I might add some shredded carrot as well. Thanks!
