Peanut Rice Crispy Treats

Ingredients (use vegan versions):

    1/2 cup corn syrup
    1/4 cup brown sugar
    1 cup chunky peanut butter
    1 cup cornflakes, slightly crushed
    3 cups rice crispies
    1/2 cup (or so) vegan chocolate chips/peanut butter chips/whatever you want

Directions:

Bring corn syrup and brown vegan sugar just to a rolling boil; remove from heat and stir in peanut butter until it turns into a gooey mess. Stir in cereals and chocolate chips; mix well. Wet hands; spread glop into a 9 x 13 pan and let cool. Cut into bars.

This recipe has been a family favorite for forever; I happened to ask for the recipe recently and discovered to my amazement that didn't even have to be veganized as long as you use vegan chocolate chips!

Preparation time: 15 min


These are very rich and yummy.  Extremely easy to make.

This recipe was very good. It doesn't take long to make and it is delicious. The only thing that wasn't mentioned was that the chocolate chips will melt in the mixture which will make it too chocolaty. I used walnuts and they were fabulous.  Good recipe!

Yum, yum yum!  These are a lot like scotcharoos, but less sugar!  They taste just as good as scotcharoos, but are a bit healthier.  Thanks!

I think next time I'll use less cereal as well. These taste really good, but I had to eat them with a spoon because they didn't stick together.

I didn't know Rice Crispies weren't vegan.  I used the local cheap brand, Flavorite.

Yeah its the added vitamins in Rice Krispies that make them not vegan, if I recall correctly.

These are delicious!!! I used carob chips instead and I always cut it in half....I live by myself, I have no one to share with  Sad

I haven't tried this recipe, but in response to the above questions, gelatin is the problem with marshmallows, and I just buy vegan marshmallows online at veganstore.com, you can buy the irregulars (cheaper but not good for roasting) and when I used them for rice krispies treats over thanksgiving they disappeared!

Nature's Path - available in Canada and the US (possibly elsewhere?) at most health food stores and some major chains (Loblaws and No Frills in Canada carries it) has a rice krispie cereal that is vegan, only ingredient is brown rice.
