let me start by saying that i am a health freak and NEVER eat cake unless it's totally worth it - and this cake is WORTH IT. it almost tastes like it has chocolate pudding in it. I live in the deep south and none of my family is even close to being vegan - and they loved it! they never love my cakes!


-it did crumble a little though, but that was only because i was excited and took it out of the oven before it was time.

Mmmmm! Delicious. I brewed two cups of coffee and completely replaced the water with that, then added peppermint extract to a ollllllld frosting recipe I veganized. Can we say peppermint mocha cake? Yum! I rated it four stars, though, because when I tried to layer two 9" cakes, the top one split into thirds. Oops! It's not pretty, but it's still yummy. =)

This cake has been made many many times in our family. We made it for Thanksgiving 2 years in a row. My mom made it for our wedding cake (and a carrot cake with it and  vegan cream cheese frosting) and everyone loved it! We like to eat it with apricots and blueberries. My mom puts raspberry jam in between layers. This is a great recipe and super easy to make cake that all your non-vegan friends and family will LOVE.

This is the chocolate cake recipe I always use... it's in one of the cookbooks I have, "Foods That Don't Bite Back"... it should be called the No-Fail Fluffiest Chocolate Cake Ever Recipe.  I must make it twice a month.  Even my boyfriend has made it and doesn't screw it up.  Not that I think vegan baking ever tastes different than non-vegan, but if there's one recipe that would fool even the biggest skeptic, it's this one.

had a bit of a hard time with this cake, but not because of the recipe. the oven and my impatience were the culprits here.
i tweaked the recipe just a bit, by using 2/3 whole wheat pastry flour for the total amount of flour needed, rest of it was all-purpose. I also reduced the amount of sugar in half, and used soymilk instead of water.
excellent results, despite getting a bit of a rough start!

one last change I made and forgot to write about: I replaced the total amount of oil with applesauce. same amount. worked like a charm!

This recipe is really good. It's one of the best chocolate cakes that i have ever tasted and i'm not that big on cake. The texture is very good also. Nice and spongy like a cake should be. I give it 4 stars.  Smiley

Its pretty good, the batter tastes better than the cake after its baked, and the cake tastes good itself. Its the best vegan cake ive made.
